STEP ONE: Preheat your air fryer to 400 degrees. Wash your zucchini and squash, slice lengthwise, and do your best to keep slices between ¼ to ½ inch thick. Your pieces don’t need to be exactly the same size but keep them no thinner than ¼ inch and no thicker than ½ inch. 

STEP TWO: Drizzle vegetables with olive oil and sprinkle with salt, pepper, and McCormick vegetable seasoning. Gently toss to evenly coat and place in your air fryer basket. It’s okay if slices are slightly overlapping but try not to overcrowd them. 

STEP THREE: Cook squash and zucchini at 400 degrees for 10 minutes, checking at 8 minutes for thinner slices. Cook until golden brown and crispy. Sprinkle with salt and pepper if desired. Serve and enjoy.

When is Squash in Season? 

Zucchini and yellow squash are both considered summer squashes. As the name implies, the peak season for these yummy veggies is June through late August. 

Winter squashes include butternut, acorn, and spaghetti squashes, and they have a later peak season. Thankfully, in most areas today, we get to enjoy all the squashes all the time.

Cooking squash in the air fryer is quick and easy. Basically speaking, all you need to do is wash and slice your vegetables, drizzle with oil and your favorite seasonings, and pop them in a 400-degree air fryer for 8 to 10 minutes.

Don’t be afraid to get creative with your seasonings. You could spice things up with taco seasoning or cool things down with dill. The possibilities are endless.

Tips to Make the Air Fryer Squash and Zucchini

If at all possible, choose fresh, local, and in-season squash. This will take your air fryer squash to the next level. 

Luckily, most of us have access to summer squash year-round at the supermarket. Even so, I personally love supporting the hardworking farmers at my local farmers’ market. It feels great to support my local economy, and I really can taste the difference! 

Be sure to thoroughly wash your zucchini and squash before slicing. Keep slices between ¼ and ½ inch thick so they get perfectly crispy and golden brown. 

Although slices can be touching and slightly overlapping, don’t overcrowd your air fryer basket. Simply make multiple batches if all your squash does not fit the first time. 

What to Do with Leftover Air Fryer Summer Squash

These tasty little squash delights never last very long in my house! If you happen to end up with leftovers, you can store air-fried squash in an airtight container in the refrigerator for 3 to 4 days.

Uncooked zucchini and squash can be frozen and stored safely for up to 3 months.

How to Reheat Squash in the Air Fryer

Reheating squash in the air fryer is quick and easy. All you need to do is follow these few simple steps:

  1. Preheat your air fryer to 400 degrees F. 
  2. Arrange squash in a single layer in the basket.
  3. Cook in the air fryer for 3 to 5 minutes or until golden brown and crispy again.
  4. Sprinkle with salt, pepper, or parmesan, if desired. Serve and enjoy!

  • Preheat your air fryer to 400 degrees.
  • Wash your vegetables. Cut them lengthwise as close to ¼ to ½ inch as you can. You definitely don’t want thinner than ¼ of an inch or larger than ½. 
  • Drizzle your olive oil and sprinkle your seasoning on your vegetables. Slightly toss them to evenly coat them. 
  • Lay them in your air fryer basket. It is okay if they slightly overlap. Cook them at 400 degrees for 10 minutes. Check it at 8 minutes for your thinner sliced ones, and then continue cooking till they are golden brown and crispy. Season with salt and pepper if desired and serve. 
  • Continue with your next batch, if needed.
