Steak is usually a hit in our house, but the trick to getting my whole family to eat it is to cook the steak to tender perfection without letting it get tough or overdone. That’s why I love making this super-easy Instant Pot steak!

The pressure cooker does an amazing job of keeping steak mouth-wateringly juicy. But, I have to say, my favorite part about this recipe might be the creamy gravy that goes on top. You’ll make it right in the Instant Pot after cooking up the steaks, so prep and clean-up are a breeze.

This dish is wonderful when I want to eat a nice meal with the family but don’t want to spend hours in the kitchen. As far as Instant Pot steak recipes go, I think the rich, creamy gravy is what really makes this one special. Just serve the steak with some vegetables or potatoes for a perfect family dinner!

I made this recipe using my Instant Pot 6-Quart Duo Nova. It’s the perfect size for my family of four and makes releasing the steam so much easier than the standard Instant Pot.

How to Make Instant Pot Steak

STEP ONE: Pat the steaks dry and sprinkle generously with salt and pepper on both sides.

STEP TWO: Press the Saute button on the Instant Pot and add the oil. Once hot, sear the steaks for 1-2 minutes on each side, then transfer to a plate and set aside.

STEP THREE: Melt the butter, then add the onion and saute for 3-4 minutes, until translucent. Add the garlic and saute for another 30 seconds, until fragrant.

STEP FOUR: Add the wine and deglaze the pot, then allow the wine to reduce. After 2 minutes, press the Cancel button.

STEP FIVE: Add the beef broth, rosemary, and thyme, then season with salt and pepper to taste. Nestle the steaks in the sauce.

STEP SIX: Secure and seal the lid and cook on Manual High for 2-5 minutes. 

STEP SEVEN: Perform a Quick Pressure Release when the timer is done. I recommend using a long oven mitt when manually releasing the pressure to ensure you don’t get burned by the steam and your hand and forearm are protected.

STEP EIGHT: Carefully remove the lid and transfer the steaks to a cutting board to rest. 

STEP NINE: Press Saute, whisk in the cream, and allow the sauce to thicken for 3-5 minutes. Season to taste, then serve with the steaks.

How Long Do You Cook Sirloin Steak in the Instant Pot?

How long you cook the steaks is going to depend on their size and your desired level of doneness. Make sure to cook them for at least 2 minutes, but no more than 5.

To cook your steak perfectly, I highly recommend using an Instant Read Thermometer. You want the internal temperature to reach at least 135 degrees F for medium-rare and up to 145 degrees F for medium. I wouldn’t suggest cooking the steak more than that for the best flavor.

Can You Cook Frozen Steak in the Instant Pot? 

Cooking steak from fresh is always going to have better taste and texture. I wouldn’t necessarily recommend cooking sirloin steak from frozen.

However, if you’re in a situation where you absolutely HAVE to cook a frozen steak in the Instant Pot, skip the sear and follow these steps:

  1. Melt the butter, then add the onion and saute for 3-4 minutes, until translucent. Add the garlic and saute for another 30 seconds, until fragrant.
  2. Add the wine and deglaze the pot, then allow the wine to reduce. After 2 minutes, press the Cancel button.
  3. Add the beef broth, rosemary, and thyme, then season generously with salt and pepper. Nestle the steaks in the sauce.
  4. Secure and seal the lid and cook on Manual High for 17 minutes. 
  5. Perform a Quick Pressure Release when the timer is done.
  6. Carefully remove the lid and transfer the steaks to a cutting board to rest. 
  7. Press Saute, whisk in the cream, and allow the sauce to thicken for 3-5 minutes. Season to taste, then serve with the steaks.

Can You Overcook Steak in the Instant Pot?

Yes, it is entirely possible to overcook steak when using an electric pressure cooker! And once you’ve cooked out the moisture, there’s no way to add it back in. 

That’s why I strongly suggest using an Instant Read Thermometer to prevent overcooking. With sirloin steak, I never recommend cooking it beyond an internal temperature of 145 degrees F.

Can You Store Leftover Steak?

Absolutely! Allow the steak to cool to room temperature, then store in a shallow airtight container or plastic gallon bag with a zipper top in the refrigerator for up to four days. If you have leftover sauce, store it separately in an airtight container in the refrigerator for three or four days.

Instant Pot Steak

Ingredients 

  • 2 sirloin steaks, 1-inch thick
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup onion, sliced
  • 2 cloves garlic, minced
  • ½ cup red wine
  • 1 cup beef stock
  • 1 rosemary sprig
  • ½ teaspoon thyme leaves
  • ½ cup heavy cream

Instructions 

  • Pat the steaks dry and sprinkle generously with salt and pepper on both sides.
  • Press the Saute button on the Instant Pot. Heat the oil, then sear the steaks for 1-2 minutes on each side. Transfer the steaks to a plate and set aside.
  • Melt the butter, add the onion, and saute for 3-4 minutes, until translucent. Add the garlic and saute for 30 seconds, until fragrant.
  • Add the wine and deglaze the pot, then allow the wine to reduce for 2 minutes. Press the Cancel button. 
  • Add the beef stock, rosemary, and thyme, then season with salt and pepper to taste.
  • Nestle the steaks in the sauce. Secure and seal the lid and cook on Manual High for 2-5 minutes (depending on the size of your steak and desired doneness). Perform a Quick Pressure Release when the timer is done.
  • Carefully remove the lid and transfer the steaks to a cutting board to rest. Press Saute, whisk in the cream and allow the sauce to thicken for 3-5 minutes. Season to taste, then serve with the steaks.

Notes

How To Cook Frozen Steak in the Instant Pot:

If you absolutely HAVE to cook a frozen steak in the Instant Pot, skip the sear, do steps 3-5 (adding extra salt and pepper), and cook them for 17 minutes with a quick pressure release.
But I recommend cooking them from thawed for the best flavor and tenderness.

    I made this tonight, and it was wonderful! To reduce calories, I used a cornstarch slurry and 1/4 cup of half and half for the sauce, but it was still a hit. This will definitely become a staple at my house!

    So….if you can only find or get a hold of thin sliced sirloin would you recommend cutting the cook time in half???

      I would start it at half the cook time and check the temperature midway through — even better if you have a thermometer probe in the steak while it cooks so you can check on it as it cooks.
