Homemade chicken nuggets sound like more work than they are. For these air fryer chicken nuggets, you dip real chicken in melted butter, roll it in seasoned crumbs, and let the air fryer crisp it up. That is the whole thing. No egg wash, no deep frying, no greasy bag from the freezer aisle.

Mine come out crisp on the outside and tender in the middle, and on a busy night they beat the drive-through without much more effort. The butter is the trick. It crisps the coating and means you never have to spray the basket. These have earned a spot in my regular rotation, right next to the rest of my easy air fryer recipes.

What you need

  • One large chicken breast, cut into bite-size chunks. I trim the fat, slice it into half-inch strips, then cut those down so the pieces cook evenly.
  • Italian breadcrumbs. This is the coating that gives them that classic seasoned crunch.
  • Garlic powder and Italian seasoning. A little extra flavor stirred right into the crumbs.
  • Melted butter. The one that does the real work. Dipping the chicken in butter before the crumbs helps everything stick and crisp up, so there is no egg and no oil spray.
  • Salt and pepper, on the chicken before it gets coated.

How I make them 

STEP ONE: Trim the fat off the chicken breast, slice it into half-inch strips, then cut the strips into nugget-size chunks. I halve the smaller strips and cut the bigger ones into thirds.

STEP TWO: Season the chunks with salt and pepper and let them come to room temperature. This part matters. Cold chicken makes the butter seize up and the crumbs slide right off.

STEP THREE: Stir the breadcrumbs, garlic powder, and Italian seasoning together in one bowl. Melt the butter in another.

STEP FOUR: Dip each piece in the melted butter first, then roll it in the seasoned crumbs.

STEP FIVE: Preheat the air fryer to 390 degrees F. Space the nuggets out in the basket so they aren’t touching, no spray needed. Cook for 10 to 12 minutes, flip them halfway, and check the last couple minutes since every fryer runs a little different.

Getting them really crispy

  • Room-temperature chicken is the difference between crumbs that stick and crumbs that fall off. Don’t skip the rest.
  • For an even crispier coating, dredge the chunks in a little flour before the butter.
  • Keep the pieces about the same size and give them room. Crowded nuggets steam instead of crisp.
  • No oil spray. The butter coating already handles that.

Ways to switch them up

  • Skip the breadcrumbs and coat the chicken in just the seasonings, or use crushed pork rinds or almond flour if you’d rather go without the crumbs. My air fryer chicken tenders with no breading has more ideas for that.
  • Swap in panko for an even crunchier coating.
  • Add cayenne and paprika for a Cajun kick.
  • Stir some hot sauce into the melted butter for buffalo nuggets.

The dips

These are made for dipping. I reach for homemade buffalo sauce and homemade BBQ sauce, and honey sriracha has turned into a favorite around here too. The kids stick with plain ketchup, and honestly that never gets old either.

Make them ahead or cook them from frozen

These freeze really well, so I make a big batch and stash some for later. Leah heads straight for them as an after-school snack, so a bag in the freezer saves me on the busy days.

To cook them from frozen, follow the same steps. They just need a few extra minutes, since these are raw, not the pre-cooked kind in a bag. Use a meat thermometer and pull them once the center hits 165 degrees F. If you want the shortcut, you can cook store-bought frozen chicken nuggets in the air fryer the same way.

Questions I get

How long do chicken nuggets take in the air fryer?

Around 20 to 25 minutes start to finish, and only about 10 of that is hands-on. The air fryer needs a few minutes to preheat, then the nuggets cook in 10 to 12. Check them in the last couple minutes so they don’t dry out.

Can I use chicken thighs instead of breast?

You can. Boneless skinless thighs work great here and turn out a little juicier. Trim them, cut them into the same bite-size chunks, and just keep an eye on the time, since thigh meat can run a touch longer.

What’s the best way to reheat them?

The air fryer, every time. It keeps them crisp instead of rubbery. Preheat to 350 degrees F, spread the leftovers in a single layer, and warm them 3 to 5 minutes until heated through. Reheating chicken in the air fryer works the same way for tenders.

How do I store leftovers?

Once they’ve cooled, I keep leftover nuggets in an airtight container in the fridge for 3 to 4 days. They freeze well too, so I’ll stash extras in a freezer bag for up to 2 months and reheat them straight from frozen.
