The best artichokes have that slight crispiness on the leaves and are absolutely tender near the heart. Honestly, the best air fryer appetizer. So why are people boiling and steaming artichokes when air fryer artichokes get that perfect texture?!
I use just 5 ingredients to bring out the freshness of the artichoke while truly enhancing the texture of the vegetable. It’s as easy as adding the ingredients, closing the air fryer, and letting the small appliance do all the work!
My daughter Leah has even taken to helping me with my simpler recipes and now helps me make artichokes in the air fryer. She loves the colors on the inside of them.

All you need is 5 ingredients and 20 minutes from start to finish. That’s fresh artichokes, lemon juice, olive oil, salt, and pepper. If you have artichokes, I can bet you have the other 4 ingredients!
I air fry artichokes cut side down for most of the timing so the insides don’t dry out and get tender. Once they’re cooked, I flip them over to crisp up the last few minutes. It ends up in the most delicious and fresh air fryer artichoke I’ve eaten!

How to Pick the Best Artichoke
When Iโm choosing fresh artichokes, I choose ones that feel heavy for their size and have tightly packed leaves. I also gently squeeze them and listen for a slight squeak, which tells me theyโre fresh!

Ingredients
- Artichokes โ I like using medium fresh artichokes because they air fry evenly and the leaves stay tender with just the right amount of bite.
- Lemon juice โ I use fresh lemon juice to add a brightness that balances the artichokeโs naturally rich flavor.
- Olive oil โ Olive oil is the key to getting the leaves to crisp up in the air fryer.
- Kosher salt and black pepper โ I keep the seasoning simple so the natural flavor of the artichoke shines through.
How to make Air Fryer Artichokes
STEP ONE: Preheat the air fryer to 340F. Cut the whole artichokes in half lengthwise and remove the fuzzy choke (itโs inedible) using a spoon.
STEP TWO: Pour the lemon juice over the cut sides of the artichoke. Drizzle them with olive oil and season with salt and pepper to taste on both sides.
STEP THREE: Place the artichokes cut side down in your air fryer and air fry them for 12 minutes. Open the air fryer, flip the artichokes, and then air fry them for 4 more minutes (for a total of 16 minutes).ย


Recipe Tips
- I always remove the tough outer leaves so the inner edible leaves have a chance to get crispy.
- Using a spoon is the easiest way to scoop out all the fuzzy choke from the inside of the artichoke halves.
- To remove any excess moisture, I pat the artichokes dry with a paper towel. This helps the olive oil stick.
- I drizzle olive oil generously over the artichokes to help them get brown and crispy in the air fryer.
- To make sure the air fryer artichokes cook evenly, I place them in a single layer in the air fryer basket with room in between for the hot air to circulate.
Variations
- Add grated Parmesan cheese in the last 2 minutes. Sprinkle it right over the artichoke leaves before they finish for a more savory cheesy flavor. My homemade garlic parmesan sauce as a dipping sauce or drizzled on top works great too.
- Make them spicy! Add some red pepper flakes, or even better, drizzle them with my hot honey sauce recipe.
- Roll them in breadcrumbs. This gives the air fryer artichoke an extra crunch. The same trick works for my fried green tomato recipe in the air fryer.
- Use lemon pepper flavoring. Skip the salt and pepper and just lemon pepper seasoning or drizzle it with my lemon pepper sauce recipe at the end instead.
What to serve with
I love serving this easy appetizer with a variety of dips like homemade tzatziki sauce, lemon herb tahini, avocado mayo, or spicy mayo!

When I eat an air fryer artichoke, I pull off each leaf and scrape the tender part at the base with my teeth. Once I get to the center of the artichoke half, I spoon out the meat at the top of the stem, which is called the heart. Itโs the best part!
Why are my air fried artichoke leaves soggy?
When my artichoke leaves turn out soggy, itโs usually because there was too much moisture before cooking or they were crowded in the air fryer basket. Patting them dry with a paper towel and cooking in a single layer makes a big difference in getting that crispy texture!
How should I store leftover air fryer artichokes?
I let leftover artichokes fully cool, then store them in an airtight container in the refrigerator. They stay fresh for up to 3 days.
How should I reheat artichokes in the air fryer?
My favorite way to reheat artichokes is to air fry them at 340F for about 5 minutes so the leaves warm up and regain a bit of crispness. This works much better than using the microwave, which tends to make them soft and kind of rubbery.

Easy Air Fryer Artichokes (No Breading!)

- 3 medium artichokes
- 3 tablespoons lemon juice (one small lemon)
- 1 tablespoon olive oil
- Kosher salt to taste
- Black pepper to taste
Instructions
- Preheat the air fryer to 340F.
- Cut the artichokes in half lengthwise and remove the fuzzy choke from the inside using a spoon (it's not edible).
- Pour the lemon juice over the cut sides. Drizzle with olive oil and season with salt and pepper, to taste. Flip them and repeat on the leafy side.
- Place the asparagus cut side down in the air fryer and air fry them for 12 minutes. Open the air fryer, flip the artichokes, then fry for 4 more minutes (16 minutes total).
