My Easy Recipe for Sirloin Tip Roast in the Slow Cooker
My recipe for sirloin tip roast in the Crockpot first came together when my husband, Ben, and I were planning to host family for Sunday dinner. However, my kids’ soccer games, which had been rained out a few weeks earlier, were rescheduled for the same day.
I’d been planning to make the sirloin tip roast recipe in the oven or on the grill, but those methods dried out or overcooked really easily if I lost track of time. I also wasn’t going to have time to cook the veggies separately, so I decided to throw the potatoes, carrots, onions, and garlic right into the crock pot, then added the sirloin roast and seasonings on top.
When I got home, I barely had time to shower before my in-laws showed up. But thank goodness, the sirloin tip roast came out of the slow cooker fork tender, and the veggies were ready to serve!
My mother-in-law actually even asked where I could’ve found the time to make such an amazing dinner when she knew we were at soccer games all day. Talk about a win!

Crock Pot Sirloin Tip Roast Ingredients
- Sirloin tip roast – I love this cut because it’s lean but super flavorful, and it gets so tender and juicy in the slow cooker.
- Baby potatoes – These make perfectly creamy potato bites that soak up the roast’s juices. I leave the skins on for texture.
- Baby carrots – These add a natural sweetness and color to the dish. I’ve also used regular carrots cut to the size and thickness of baby carrots.
- Yellow onion – Onion is my favorite for bringing savory depth and sweetness to a dish, especially when it has all day to break down in the slow cooker. Sweet onions will work too.
- Garlic cloves – Freshly minced garlic is my preference, but jarred or even garlic powder can work in a pinch.
- Onion soup mix – This shortcut adds incredible flavor and helps add depth to the whole recipe.
- Worcestershire sauce – I can never pronounce this sauce, but it’s my go-to for adding umami and savory richness!
- Beef broth – This keeps everything moist while the beef roasts to prevent it from drying out, while also adding flavor. Veggie stock will work too.
- Cornstarch – Optional, but combined with water, it creates a slurry that will thicken the liquid into a delicious gravy.
- Salt and pepper – These classic seasonings are so good for bringing out the natural flavors of the sirloin tip roast.
How to Cook Sirloin tip Roast in a Crock Pot

STEP ONE: Remove the twine from the beef sirloin tip roast and season the beef all over with salt and pepper.Â
STEP TWO: Wash the baby potatoes and place them in the bottom of the slow cooker. Add the washed carrots, minced garlic, and onion slices.Â
STEP THREE: Place the beef in the crock pot and position it carefully. Sprinkle the onion soup mix over the meat, followed by the Worcestershire sauce and beef stock.Â
STEP FOUR: Cover the Crockpot with a lid and set a timer. On the high setting, it will take about 4-6 hours. At low heat, the cooking time will be between 8-10 hours.Â
STEP FIVE: After the roast is fully cooked, transfer it from the slow cooker to a cutting board. Shred the meat using two forks or use a knife to slice against the grain.
STEP SIX: (Optional) If desired, add a simple cornstarch slurry to thicken the sauce. To do this, combine 2 tablespoons of water with 2 tablespoons of cornstarch and stir until it’s a smooth paste. Stir the slurry into the cooking liquid during the last 30 minutes of cooking.Â
STEP SEVEN: Season it with salt and pepper to taste. Serve with the potatoes, carrots, and onions!Â
Tips for the Best Sirloin Tip Slow Cooker Pot Roast
- I season the sirloin tip roast very generously with salt and pepper to really bring out those natural flavors.
- To keep the tip roast from burning, I layer the veggies on the bottom of the slow cooker. This also means they cook in the roast’s drippings, which makes them extra flavorful.
- I prefer to cook the beef sirloin tip roast on low for 8-10 hours. This gets the meat fork tender and never fails me!
- To turn the cooking liquid into a rich gravy, I combine 2 tablespoons of cornstarch with 2 tablespoons of water in a small bowl until smooth, then stir this mixture into the cooking liquid in the slow cooker in the last 30 minutes of cooking.
- I let the tip roast rest for at least 10 minutes under a tin foil tent before shredding with two forks so it can reabsorb all its juices and stay super tender.
Beef Sirloin Tip Roast in the Crock Pot Variations and Substitutions
- When I want to switch up the spices, I’ll add some heat and flavor with cayenne, cumin, or paprika.
- For even more veggie goodness, I’ll throw in celery or mushrooms into the slow cooker.
- I sometimes add fresh herbs like sprigs of rosemary, thyme, or bay leaves to the crock pot, then remove before serving.Â
- To make the meal a little fancier, I’ll add a splash of red wine with the beef stock. I love how this simple trick adds so much depth!
- When I want extra creaminess, I’ll use cream of mushroom soup instead of onion soup.
What to Serve with Sirloin Tip Roast in the Slow Cooker
My sirloin tip recipe already comes with veggies ready to go, so I usually serve it with some hearty comfort food like my biscuit recipe, garlic cheese bread, or Velveeta mac and cheese.
I also think it’s amazing alongside fancier sides like air fryer green beans, roasted acorn squash, or candied yams!

I try to store the meat and veggies in their own separate airtight containers. Leftovers will stay fresh in the refrigerator for up to 4 days, and I think the flavors get even deeper overnight!

- 1 1/2 pound baby potatoes
- 2 cups baby carrots
- 1 large yellow onion sliced
- 3 garlic cloves minced
- 1 packet onion soup mix 1 ounce
- 2 tablespoons Worcestershire sauce
- 1 cup beef stock
- 2 tablespoons cornstarch
- 2 tablespoons water
- Salt and black pepper to taste
Instructions
- Start by removing the twine from the sirloin tip roast and then generously season it with salt and pepper.
