STEP ONE: Slice chicken into strips and place in a mixing bowl. Drizzle with oil, then sprinkle fajita seasoning over the top. Toss well to ensure every piece is evenly coated.

STEP TWO: Transfer the seasoned chicken to the pressure cooker. Pour the salsa evenly over the chicken, then add the onions and peppers. Pour the lime juice over the entire mixture.

STEP THREE: Seal the lid on the Instant Pot, then set the cooking mode to Manual High for 4 minutes. Once done, perform a quick pressure release.

STEP FOUR: Open the lid and give the Instant Pot fajitas a gentle stir, combining everything together.

STEP FIVE: Serve your delicious Instant Pot chicken fajitas on tortillas with your choice of salsa, lettuce, shredded cheese, sliced avocado, sour cream, lime wedges, and fresh cilantro. Enjoy!

Can I Use Frozen Chicken For Instant Pot Chicken Fajitas?

Yes, you can use frozen chicken for this recipe. Adjust the cooking time to 12 minutes with a 5 minutes natural pressure release.

Instead of slicing ahead of time, add the boneless breasts to the IP whole. You’ll also want to use a frozen fajita veggies mix — fresh veggies will be too soft with the extra cooking time. Once cooked, let the chicken rest for a few minutes before slicing or shredding.

Can I Make Chicken Fajitas in a Slow Cooker Instead of the Instant Pot?

Absolutely! Simply follow a similar process of layering the ingredients, then cook on High for 3-4 hours or on low for 6-7 hours.

It’s up to you whether you want to slice the meat ahead of time or after it has been cooked. Since the crockpot makes chicken extra tender, you can also shred if you prefer.

Do I Need to Marinate Chicken for IP Fajitas?

Marinating the chicken is not necessary when using an Instant Pot.

The high-pressure cooking method infuses the chicken with flavor in minutes, even better than if you marinated for hours!

What is the Best Way to Reheat Chicken Fajitas?

First, make sure to store you Instant Pot fajitas properly! Allow any leftovers to cool, then transfer to an airtight container. Store in the refrigerator for up to 4 days.

The easiest way to reheat Instant Pot chicken fajitas is in the air fryer. Place the fajita filling in the basket and air fry for 3-5 minutes at 350 degrees F.

You can also reheat fajita meat and veggies on the stovetop. Add the filling to a skillet with a splash of liquid, then place a lid over the pan and warm over medium-low heat. Once the water has evaporated, remove the lid and increase the heat, stirring for a few minutes.

Ingredients

  • 1 ½ pounds boneless skinless chicken breast, cut into strips
  • 2 tablespoons fajita seasoning (or taco seasoning works too!)
  • ½ tablespoon olive oil
  • 1 cup salsa
  • 2 bell peppers, sliced
  • 1 small onion, sliced
  • 1 lime, juiced

Instructions

  1. Place chicken strips in a mixing bowl. Drizzle over the oil and sprinkle on seasoning, tossing to coat well.
  2. Place the seasoned chicken in the bottom of the Instant Pot, then top with the salsa. In a second layer, add the onions and peppers. Pour in the lime juice. Do not stir.
  3. Secure and seal the lid. Cook on Manual High for 4 minutes, performing a quick release of pressure at the end of the cook time. Open the lid and stir the contents of the pot together.
  4. Serve with your favorite fajita toppings
