- 1 ½ pounds boneless skinless chicken breast cut into strips
- 2 tablespoons fajita seasoning or taco seasoning works too!
- ½ tablespoon olive oil
- 1 cup salsa
- 2 bell peppers sliced
- 1 small onion sliced
- 1 lime juiced
Place chicken strips in a mixing bowl. Drizzle over the oil and sprinkle on seasoning, tossing to coat well.
Place the seasoned chicken in the bottom of the Instant Pot, then top with the salsa. In a second layer, add the onions and peppers. Pour in the lime juice. Do not stir.
Secure and seal the lid. Cook on Manual High for 4 minutes, performing a quick release of pressure at the end of the cook time. Open the lid and stir the contents of the pot together.
