How to Make Corn Casserole

STEP ONE: Preheat your oven to 350 degrees F and grease an 8×8 casserole dish. 

STEP TWO: Melt the butter and cream cheese in a skillet and stir until combined.

STEP THREE: Combine the Jiffy corn mix, eggs, corn, cheese (I used cheddar), and milk in a separate bowl. Add the melted cream cheese and butter mixture, then stir to incorporate.

STEP FOUR: Transfer the mixture to your prepared baking dish.

STEP FIVE: Bake for about 55-60 minutes or until set.

One of the many fantastic things about this corn casserole without sour cream recipe is its versatility.

It makes a knock-out Thanksgiving side dish and also pairs perfectly with just about anything.

Is Corn Casserole the Same as Corn Pudding?

Corn pudding and corn casserole are similar, but not exactly the same.

Corn pudding is a traditional staple dish in the Southeastern United States and is believed to have originated with the Indigenous peoples of the region. 

It is typically a much simpler dish, composed of stewed corn, water, and some combination of thickening and texturizing agent.

Corn pudding does not usually contain added butter, sugar, or other ingredients like this delicious sweet corn casserole. 

Corn souffle is another close cousin of these two dishes and is essentially a corn casserole without sugar. This is a great choice if you want a rich casserole on the more savory side.

All of these traditional dishes are fantastic, but I must admit that this dish is my absolute favorite corn dish of all time. You’ll see what I mean once you try it!

Why is My Corn Casserole Runny?

First, be sure that your casserole has sufficient time to cook. You want a golden brown top and no jiggling in the center. 

A runny casserole may also result from too much moisture, usually from the corn. Since this is a recipe for corn casserole without creamed corn, there is already less moisture.

Even so, be sure to drain the whole kernel corn thoroughly.

How Do I Know If My Corn Casserole is Done?

The center of your casserole should be firm, and the top should be a light golden brown.

Once the heat is off, I like to leave it in the oven (with the door open) for an additional 5-7 minutes before serving.

Can I Double this Easy Corn Casserole Recipe?

Yes, you can! This is a recipe that I often double, especially if I am bringing my casserole to a large holiday gathering. Everyone loves it so much, it disappears so fast!

If you want to make a double batch, double the ingredients and upgrade to a 9×13 inch pan.

Start by adding an additional 10 minutes to your cooking time, adding more as needed to achieve a golden brown top.

Can I Freeze Corn Casserole?

If you don’t gobble up this casserole immediately, leftovers are wonderful in the refrigerator for 5-7 days. 

In the event of lots of leftovers, it can last up to 3 months in the freezer. Once you are ready for your leftovers, thaw overnight in the refrigerator before reheating and enjoying.

  • 3 cans of whole kernel sweet corn drained
  • 2 eggs
  • 8 ounces cream cheese softened
  • 1 box of jiffy corn mix 8.5 oz box
  • 1 stick of butter melted
  • 1 cup of shredded cheese I used cheddar
  • 1/2 cup of milk


  • Preheat the oven to 350 degrees. 
  • In a skillet, melt your butter and cream cheese, till they are combined. 
  • In a separate bowl, combine the eggs, jiffy corn mix, corn, cheese and milk. Once the butter and cream cheese is melted, incorporate them into the bowl. 
  • Transfer the ingredients to a greased 8×8 dish. 
  • Bake at 350 for 55-60 minutes, until set.

    • Hi Gloria, I have not tried it with subbing the cream cheese for buttermilk, but I don’t see why not! I do personally love the creaminess the cream cheese adds to the casserole though. Yes, you could leave out the extra cheese as well.
