Baked Italian Sausage

My baked Italian sausage uses just 6 ingredients plus salt and pepper to create an easy dinner all on one sheet pan. It’s perfect for busy nights because everything roasts together on one pan with very little hands-on work.
Sausages are a staple in my house because the whole family loves them. A few more of my favorite sausage recipes are my air fryer Italian sausage, air fryer brats, and cast iron Italian sausage!

Why cooking Italian sausage in the oven is so easy

All in one pan – I toss everything onto a baking sheet and let it cook in the oven. I even spoon the vinegar over top the sausage and veggies so I don’t have to dirty another bowl.

I love baking the sausages because it gives them time to brown on the outside while staying juicy on the inside so they come out roasted to perfection. And if I want to throw any veggies onto the pan, they’ll soak up all those flavorful drippings!
Prep takes about 5 minutes and then the sausages roast for an hour, which means I can get home with the kids from a busy day, throw dinner in the oven, then have time to make sure everyone is showered and has what they need to do homework. Then dinner’s ready!
Ben usually handles clean-up when I cook, and he loves that the only dish is the baking pan. It’s a win for everyone!
What temperature to bake Italian sausage
I like to roast Italian sausage in the oven at 350°F because it gives the links enough time to cook through and still get a really nice browning on the outside. If I bump the oven down to 300°F, the sausages come out a little juicier but don’t brown quite as much and usually need a few extra minutes to cook through.
For a darker exterior, I’ll bump the oven temperature up to 400°F and keep a closer eye on the sausages so they don’t dry out. No matter which temperature I use, I always confirm the internal temperature reaches 160°F for pork sausage or 165°F for chicken sausage.
How long to cook Italian sausage in the oven
Cooking time depends on both the type and size of the sausage!
Baking standard pork sausage like Italian sausage links, rope-style Italian sausage, or sweet or hot Italian sausage in the oven will all take the same amount of time, about 50-60 minutes at 350°F. With pork, the internal temperature needs to reach 160°F.
Chicken or turkey Italian sausage needs to cook to an internal temperature of 165°F, but because the meat is leaner, they usually cook a little faster. I start checking the internal temp after 30 to 40 minutes in the oven at 350°F.
How to tell when Italian sausage is done
- Check the internal temperature with a meat thermometer. Pork sausage should reach 160°F while chicken or turkey sausage should reach 165°F.
- Look for even browning. The casing should have a nicely roasted appearance.
- Cut into one if needed. The inside should be fully cooked with no translucent or raw-looking meat.
- Notice the juices. Properly cooked sausage releases juices that are clear rather than pink.
- Feel the texture. The sausage should feel firm but still springy rather than soft in the center.

Baked Italian sausage ingredients
- Italian sausages – The star of the recipe! I use sweet or hot pork Italian sausage most often, but chicken or turkey versions also work well.
- Olive oil – Helps everything on the pan roast and brown. It also helps coat the sausage and veggies with the seasoning.
- Red wine vinegar – This adds brightness that balances the richness of the sausage.
- Dried oregano – A little bit gives everything that classic Italian flavor.
- Salt and black pepper – Simple seasonings go a long way for enhancing the taste.
- Bell peppers – I love adding red, orange, and yellow peppers to the pan. They become sweet and caramelized while roasting.
- Spanish onion – The onion roasts into tender, flavorful wedges that pair perfectly with the sausage.

Recipe tips
- Use a roomy sheet pan for cooking Italian sausage in the oven. Extra space helps the sausages brown instead of steam.
- Flip the sausages halfway through cooking. This gets the sausages browned on all sides and helps them cook more evenly.
- Check doneness with a meat thermometer. This is the best way to ensure the oven baked Italian sausage is cooked to perfection!
- Bake similar-sized links together. They’ll finish cooking at roughly the same rate.
- Don’t pierce the casings. If you pierce the casings, it allows the juices to escape, and then the sausage can turn out dry.
Variations
- Chicken or turkey sausage also pair wonderfully with the vegetables and seasonings.
- I love adding about ½ teaspoon of crushed red pepper flakes on top for a touch of heat.
- A clove of minced garlic is another welcome addition right on top of the sheet pan!
- Italian seasoning, thyme, or rosemary can also be used instead of oregano.
- Don’t stop at bell peppers. I often add zucchini, cherry tomatoes, broccoli, and mushrooms to the mix for more variety.
What to serve with oven baked Italian sausage
I like serving baked Italian sausage with a big pan of baked penne pasta or my spicy rigatoni recipe for a hearty meal where no one will leave the table hungry!
If I’m keeping dinner simple and letting the oven baked Italian sausage be the star, I’ll add an easy crowd-pleaser like air fryer garlic bread or baby potatoes in the air fryer to round everything out.

Baked Italian Sausage FAQs
Do I need to poke the sausages before cooking them in the oven?
Nope! No need to prick a hole in the sausages before cooking them. In fact, I find that poking them before roasting actually makes them come out dry. Leave them intact — they won’t explode when cooked, don’t worry.
Can I cook frozen Italian sausage in the oven?
Yes, I’ve used frozen Italian sausage in this recipe in the past. The process is almost exactly the same, but I usually let them roast on their own for the first 20-30 minutes of cooking so the veggies don’t burn. Once they are partially cooked, pull them out and add the veggies and other ingredients, then follow the rest of the recipe as written.
How should I store leftover baked Italian sausage?
Store leftovers in an airtight container in the refrigerator for up to 4 days. I like to enjoy them reheated in a sandwich with melted cheese on top!

Easy Baked Italian Sausage (6 Ingredients!)
Equipment
- Large rimmed baking sheet
Ingredients
- 6 Italian sausages
- 3 large bell peppers, cut into thick wedges, assorted colors
- 1 large Spanish onion, cut into thick wedges
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 350°F.
- Place the peppers, onions, and Italian sausages on a large rimmed baking sheet.
- Evenly drizzle the olive oil and red wine vinegar over the baking sheet, then sprinkle on the oregano, salt, and pepper. Gently toss everything around, if needed.
- Place the baking sheet on the middle rack of the oven and bake it for 50-60 minutes, flipping the sausage and stirring the vegetables about halfway through the cooking time.
- It's done when the sausages have browned and register 160°F with an instant-read thermometer
