The key is to brown the Italian sausages in a skillet, set them aside, then cook the peppers and onions right in the same pan! The veggies pick up so much of that savory flavor, plus you don’t have to deal with the hassle of multiple pans. Talk about a win-win!

How to make Italian Sausage and Peppers

STEP ONE: Slice the onion and bell peppers, then open the can of diced fire-roasted tomatoes.

STEP TWO: In a large pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. 

STEP THREE: Once the oil is hot, add the Italian sausages to the skillet and brown them on all sides for about 5-8 minutes.

STEP FOUR: Remove the sausages from the skillet and set them aside.

STEP FIVE: In the same skillet, add the remaining tablespoon of olive oil, then the sliced onions and bell peppers. Season with salt and pepper to taste.

STEP SIX: Stir and cook over medium heat until they begin to soften, about 5-7 minutes.

STEP SEVEN: Add minced garlic and Italian seasoning. Stir until well incorporated. 

STEP EIGHT: Pour in the diced fire-roasted tomatoes, stir to combine, then simmer the mixture uncovered for 5 minutes to allow flavors to meld together.

STEP NINE: Place the browned sausages on top of the vegetable mixture in the skillet, then cover. Continue cooking over medium heat for 10-15 minutes or until the sausages are fully cooked through and the vegetables are tender to your liking.

STEP TEN: For a complete meal, serve the sausage, peppers, and onions hot on their own, in hot dog buns, or over pasta or rice.

Variations of Sausage Peppers and Onions

  • For a lighter dish, use turkey, chicken, or vegan sausage.
  • For a saucier consistency, add about ¼-½ cup of water along with the fire-roasted tomatoes.
  • If you like heat, throw in some hot pepper flakes for a kick.
  • Add sliced mushrooms for a pop of earthy flavor.
  • Sprinkle shredded mozzarella in during the last few minutes of cooking for a cheesy twist.

What to serve with Italian Sausage and Peppers

I use this dish for weeknight dinners, potlucks, and summer cookouts! You can’t go wrong with pairing it with BLT pasta salad, cucumber onion salad, pea salad with eggs, or a simple egg salad.

For dessert, I recommend Jello with fruit cocktail or fruit salad with Cool Whip!

Cool any leftovers to room temperature before storing them in an airtight container in the fridge, where they’ll stay fresh for up to four days. Perfect for meal prep or tomorrow’s lunch!

Reheating Italian Sausage Peppers and Onions

I recommend warming Italian sausage with peppers and onions gently on the stove over medium heat. If necessary, add a splash of water to keep everything moist. 

If you’re in a rush, a few minutes in the microwave will do the trick.

Ingredients

  • 5 mild Italian sausages
  • 1 yellow onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 tablespoons olive oil divided
  • 1 teaspoon minced garlic
  • 1 14.5 oz can diced fire-roasted tomatoes undrained
  • 1/2 cup water
  • salt to taste
  • pepper to taste
  • 1 teaspoon Italian seasoning

Instructions
 

  • Slice the onion and bell peppers, then open the can of diced fire-roasted tomatoes.
  • In a large pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot, add the Italian sausages to the skillet.
  • Brown them on all sides for about 5-8 minutes. Remove the sausages from the skillet and set them aside.
  • In the same skillet, add the remaining tablespoon of olive oil and the sliced onions and bell peppers. Season the vegetables with salt and pepper to taste. Stir and cook over medium heat until they begin to soften, about 5-7 minutes.
  • Add minced garlic and Italian seasoning to the vegetables. Stir well to incorporate the seasoning.
  • Pour in the diced fire-roasted tomatoes and stir to combine. Simmer the mixture uncovered for 5 minutes to allow flavors to meld together. If you prefer a saucier consistency, add about 1/4-1/2 cup of water.
  • Return the browned sausages to the skillet, placing them on top of the vegetable mixture.
  • Cover the skillet and continue cooking over medium heat for 10-15 minutes, or until the sausages are fully cooked through and reach an internal temperature of 160°F (71°C), and the vegetables are tender to your liking.
  • Serve the sausage, peppers, and onions hot on their own, in hotdog buns, or over pasta, or rice for a complete meal!
