My smothered chicken thighs are seared on the stovetop and simmered in a rich, creamy gravy sauce that’s loaded with savory flavor. They are made with simple ingredients and turn out tender and juicy in about an hour!

How I make my smothered chicken so easy

Smothered chicken thighs are always in rotation in my house! They are so tasty they pass for restaurant-quality, but they’re actually quite simple to make at home.

My husband, Ben, says smothered chicken and rice is one of his favorite meals to eat whenever he’s feeling under the weather. It’s a comforting dish that always manages to make him feel better.

Since this recipe is made with simple ingredients like canned soup concentrate, dry soup mix, and chicken broth, I can easily whip it up whenever anyone in my family needs a little pick-me-up, or any time I need a reliable recipe for a weeknight dinner.

When it comes to smothered dishes, including everything from this chicken recipe to my smothered pork chops recipe, the best part is how all the flavors meld together.

In fact, I find that smothered chicken tastes even better on the second day because the gravy has continued soaking into the meat while sitting.

Ingredients for smothered chicken thighs: chicken thighs, onion soup mix, vegetable oil, cream of mushroom soup, cream of chicken soup, chicken broth, and parsley.

Smothered chicken recipe ingredients 

  • Chicken thighs – Bone-in, skin-on thighs are my favorite for this recipe. Their high fat content keeps them tender and juicy while they cook in the gravy.
  • Onion soup mix – Dry onion soup mix is the secret ingredient I use to infuse deeply savory notes into the dish. I use some to season the chicken, and the rest to make the sauce.
  • Vegetable oil – Helps the seasoning stick to the meat while also helping the chicken brown in the skillet.
  • Cream of mushroom & cream of chicken soup – These thick, velvety condensed soups form the rich gravy base. I love how the slices of mushrooms add more texture to the recipe too.
  • Chicken broth – Thins the condensed soups into a pourable gravy mixture while also adding more flavor than water could.
  • Fresh parsley – This ingredient is optional, but I just love the brightness and freshness it adds to the dish. Chives, green onions, and thyme also make great options.

How to make smothered chicken thighs

STEP ONE: Prepare the chicken thighs by patting them dry with paper towels, brushing them lightly with oil, and seasoning with half of the onion soup mix.

STEP TWO: While the oven preheats to 350°F, heat a large oven-safe skillet and cook the chicken skin-side down first, 3 to 4 minutes per side, until golden brown. Move it to a plate.

STEP THREE: In a medium bowl, combine the gravy ingredients and mix until smooth. Pour the mixture into the same skillet used for the chicken and bring it to a simmer.

STEP FOUR: Return the chicken to the skillet skin-side up, then cover with foil and bake for 30 to 40 minutes.

STEP FIVE: Let the chicken rest in the gravy for about 10 minutes before you serve it. That gives the sauce time to settle and soak into the meat.

STEP SIX: Garnish with fresh herbs if desired, then serve these skillet chicken thighs with sides of choice and enjoy!

Recipe tips

  • Brown the chicken in batches if needed. This is how I ensure every piece develops a beautiful, golden crust! 
  • Don’t overcrowd the pan. Without enough space, the chicken will steam instead of sear, resulting in soggy and rubbery meat.
  • Scrape up the browned bits in the skillet when mixing the gravy. It’s an easy way to bring out the best flavor.
  • I always cook these smothered chicken thighs past 165°F.  Since the connective tissue will break down more with time, they’ll become more tender when cooked a bit longer.

Variations

  • If bone-in chicken thighs are unavailable, I would go with boneless thighs or chicken drumsticks instead.
  • Homemade cream of mushroom and cream of chicken can be used if you prefer, but I tend to stick with canned for convenience. 
  • For a spicy twist, I add a pinch of cayenne or red pepper flakes to the seasoning! This is my easy way to add heat to smothered chicken and rice and other recipes like my baked boneless chicken thighs
  • Fresh spinach is one of my favorite additions to this dish. The greens wilt into the gravy so easily, adding texture and an elegant appearance.

What to serve with smothered chicken

My skillet chicken thighs are best served with sides like Instant Pot garlic mashed potatoes and air fryer rice because they are perfect for soaking up all the delicious gravy sauce! When I’m craving a hint of sweetness to complement this savory chicken dish, I like serving it with my sweet potato cornbread using Jiffy, or my light and creamy coleslaw recipe.

Ingredients 

  • 2 pounds chicken thighs, bone-in, skin-on
  • 4 teaspoons onion soup mix, divided
  • 2 tablespoons vegetable oil, divided
  • 1 10.5-ounce can cream of mushroom soup
  • 1 10.5-ounce can cream of chicken soup
  • ¾ cup chicken broth
  • fresh parsley, chopped, for garnish

Instructions 

  • Pat the chicken thighs dry and brush both sides lightly with oil. Sprinkle about 2 teaspoons of the onion soup mix over both sides.
  • Preheat the oven to 350°F. Heat the remaining oil in a large oven-safe skillet over medium-high heat, then add the chicken skin-side down and cook 3 to 4 minutes per side until golden brown. It doesn't need to be cooked through yet. Keep an eye on the onion bits, since they scorch faster than the skin browns. Move the chicken to a plate.
  • Whisk the cream of mushroom, cream of chicken, broth, and the remaining 2 teaspoons of onion soup mix in a bowl until smooth. Pour it into the skillet and bring to a gentle simmer, scraping up the browned bits from the bottom.
  • Return the chicken to the skillet skin-side up in the gravy. Cover with a lid or foil and bake 30 to 40 minutes, until the chicken reaches 165°F to 175°F.
  • Let it rest in the gravy for about 10 minutes so the sauce settles. Sprinkle with parsley and serve with mashed potatoes or rice.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat on the stovetop with a splash of chicken broth to loosen the gravy back up, since it thickens in the fridge.
If your gravy is thinner than you’d like, stir in a quick cornstarch slurry. Mix a little cornstarch with equal water, then stir it in and let it simmer until it thickens.
