Pineapple Fluff

My pineapple fluff is creamy, fluffy, and full of tropical pineapple flavor. It’s made with just 5 ingredients and only takes 10 minutes to put together!

My Easy Pineapple Fluff Recipe

I got the idea to make pineapple fluff a few years back from a friend of mine when we were eating one of my creamy fruit salads said I bet this would taste amazing with pineapple as the main flavor.

A lightbulb officially went on and I went on to make this recipe. I created it to have a ton of pineapple flavor while being super easy while still being super fluffy and creamy. So I used Cool Whip and marshmallows to help me out there!

The recipe only takes 5 ingredients total to make and I can whip it up and put it in the fridge in less than 10 minutes.

My daughter Leah, who loves pineapple, has become obsessed with this pineapple fluff recipe and now I’m making it constantly!

Ingredients for pineapple fluff: Crushed pineapple, vanilla pudding, mini marshmallows, crushed pecans, and Cool Whip.

Pineapple Salad Ingredients 

  • Instant vanilla pudding – Infuses a rich vanilla flavor into every bite of the fluff and contributes to the ultra-creamy texture. Regular pudding mix won’t set up properly, so it’s important that it’s the instant kind!
  • Crushed pineapple – Sweet and tart, this type of broken-down pineapple can be found in cans at the grocery store. Be sure to keep the juices, as they are essential to both the flavor and texture of the dessert.
  • Cool Whip – This stabilized whipped cream serves as the base of the dessert, responsible for its light, fluffy, and delicate consistency. It comes frozen, so it’s important to plan ahead for thawing.
  • Mini marshmallows – Marshmallows are a classic mix-in for old fashioned fluff recipes! These chewy bits will bring additional sweetness into the recipe to balance out the tart flavor of the pineapple. I prefer the mini size over regular as they are easier to incorporate evenly.
  • Chopped pecans – Known for their delightful, buttery texture, these chopped nuts will add a satisfying crunch and a natural, subtle sweetness to the fluff.

How to Make Pineapple Fluff

STEP ONE: Combine the instant pudding mix with the crushed pineapple and juice. Stir until all of the powder of the pudding is dissolved.

STEP TWO: Next, add in the Cool Whip and mix gently until fully combined.

Cool Whip is folded into the pineapple mixture.

STEP THREE: Fold in the marshmallows and pecans, incorporating them evenly throughout the fluff.

STEP FOUR: Cover the dessert with plastic wrap and leave it to chill in the refrigerator for at least 2 hours. This will allow time for the pudding to set and for all of the flavors to combine.

STEP FIVE: Add any additional toppings, then serve and enjoy!

Recipe Tips

  • I always let the Cool Whip thaw in the refrigerator before starting this recipe so that it’s easy to mix and incorporate with the other ingredients. 
  • It’s important to use crushed pineapple and not larger chunks. The finely broken-down nature of crushed pineapple is essential for getting a texture that is smooth, rather than gritty or chunky.
  • Be sure not to drain the canned pineapple, either. The juice from the can thickens and sets the pudding mixture, and it will also add an incredible flavor!
  • Stir gently to avoid overmixing. This is my best tip to ensure that the final product turns out light and fluffy, and not dense or flat. I recommend using a rubber or silicone spatula to help fold and mix all of the ingredients together.
  • Serve this dessert salad cold! Pineapple fluff is best served chilled, straight out of the refrigerator, after it has finished setting. It can be eaten with a spoon or served with dippers like graham crackers or wafers if preferred!

Variations and Substitutions

  • A variety of nuts or seeds can be added to this recipe for extra crunch. In addition to pecans, some of my favorites include walnuts, almonds, and macadamia nuts.
  • Mixing in shredded coconut is an easy way to boost the tropical flavor of this dessert salad, and it adds another layer of texture too.
  • Cherries are another popular topping, adding juicy freshness and a burst of color. My kids love the maraschino cherries, but fresh ones will work just fine too. 
  • For an even fruitier fluff recipe, I sometimes add other canned fruits in addition to pineapple. Fruit cocktail, mandarin oranges, or canned peaches (chopped first!) pair wonderfully with the flavors.
  • To switch up the overall taste, try swapping the vanilla pudding mix with a different flavor. Lemon or cheesecake are great options.

How to store leftovers

I always transfer any leftover fluff to an airtight container to keep it fresh. Stored in the refrigerator, this sweet salad will hold up for about 3 days before the fruit starts to break down and make the mixture watery. When ready to serve again, be sure to give the fluff a gentle stir to redistribute any moisture that has started to form at the bottom of the container.

  • 3.4 ounces instant vanilla pudding mix
  • 20 ounces crushed pineapple undrained
  • 8 ounces Cool Whip thawed
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans

Instructions
 

  • Combine the pudding with the crushed pineapple and juice. Stir until all of the powder of the pudding is dissolved.
  • Incorporate the Cool Whip until it is all combined.
  • Fold in the marshmallows and pecans into the mixture.
  • Allow it to chill and set in the refrigerator for at least 2 hours. This allows the pudding to set and all of the flavors to combine.

Notes

  • This can be made ahead of time the day before or the morning of use for best quality. Just give it a gentle stir again before serving.
  • Store leftovers in an airtight container in the fridge for up to 3 days,
