How to Stabilize Whipped Cream

Chilling the mixing bowl in the freezer for 10 minutes will help keep your fresh whipped cream stable. You can also chill the beaters!

Keep in mind that this easy homemade whipped cream will start to deflate over time. If you want to stabilize it for longer, consider adding a teaspoon of cornstarch while whipping.

You could also use the gelatin method. Simply dissolve a small amount of unflavored gelatin in water, let it cool, then add it to the cream as you whip.

Best Whipped Cream Recipe FAQs

Why won’t my whipped cream stiffen?

Your homemade whipped cream recipe may not stiffen if it’s not cold enough or if it’s over-diluted with additives.

First, chill the mixing bowl and beaters in the freezer for 10 minutes. Second, don’t take the heavy cream out of the fridge until you’re ready to start whipping.

What happens if you whip whipping cream too long?

If whipped too long, this recipe for whipped cream will eventually turn into butter and buttermilk. You’ll notice it separating and becoming grainy.

To avoid this, stop whipping as soon as stiff peaks form.
