Roast Beef Sliders

My easy roast beef sliders make the perfect grab-and-go appetizer! I make these Hawaiian bread sliders with savory roast beef and melty provolone cheese, then bake in the oven until golden and crispy.

My Favorite Roast Beef Sliders Recipe

My recipe for roast beef sliders was ultimately inspired by my husband Ben’s love for sandwiches. He loves (and I mean loves) sandwiches!

The last time he was craving a roast beef sandwich, I unfortunately didn’t have any regular sandwich bread on hand. But I did happen to have a fresh package of Hawaiian rolls, so I thought I’d make a slider recipe with roast beef instead!

Sliders are so simple to make but can easily feed a crowd on game day or any other occasion. Their small size makes them simple to grab and serve, while also making them so fun to eat. And the best thing about these sliders is how easy they are to personalize with everyone’s favorite toppings and condiments, including everything from spicy sauces to caramelized onions.

Sliders Recipe Ingredients

  • Hawaiian rolls – King’s Hawaiian brand is my favorite! The 24-count package has the perfect amount.
  • Roast beef – Thinly sliced roast beef works best. I like to get mine from the deli so it’s extra fresh.
  • Provolone cheese  – This type of cheese has a mild, buttery taste. It melts wonderfully without overpowering the roast beef at all.
  • Butter  – I use unsalted, melted butter.
  • Onion powder  – Adds warmth and depth to the overall taste of the recipe.
  • Garlic powder  – Brings additional savory flavor to the sliders.
  • Everything bagel seasoning  – The perfect blend of salty and savory, this seasoning really boosts the overall flavor while also adding a nice crunch to each slider. I usually go with store-bought!

How to Make Roast Beef Sliders

STEP ONE: Preheat the oven to 350 degrees F and lightly grease a baking dish or line it with parchment paper.

STEP TWO: Use a serrated knife to slice the slab of Hawaiian rolls in half horizontally. Place the bottom half in the baking dish, keeping them all connected.

STEP THREE: Place an even layer of roast beef over the bread, followed by provolone slices. Next, gently lay down the top half of the bread.

STEP FOUR: Combine the melted butter, garlic powder, and onion powder in a small bowl. Then brush the butter mixture evenly over the tops of the rolls and sprinkle the tops with everything bagel seasoning.

STEP FIVE: Bake the sliders, uncovered, for 12 to 15 minutes or until the tops are golden brown.

STEP SIX: Allow the sliders to cool for 5 minutes before cutting them into individual sliders. Serve warm and enjoy!

Tips for the Best Roast Beef Hawaiian Roll Sliders

  • To slice the bread easily, I use a sharp serrated knife and cut with a sawing motion. I make sure to press down gently to hold them all in place without squishing the buns!
  • Bring the meat to room temperature before getting started. If it’s fresh from the fridge, it will chill the cheese and prevent it from melting evenly.
  • Layer the ingredients all the way to the edges so that each slider has an equal amount of meat and cheese.
  • If the bread is browning too quickly, I like to loosely cover the baking dish with aluminum foil to slow the process.

Roast Beef Sliders Recipe Variations and Substitutions 

  • When Hawaiian rolls are unavailable, I use classic dinner rolls or another soft roll of choice.
  • Pre-packaged roast beef will work just fine, though freshly sliced meat from the deli is always my preference. 
  • For a different taste, swap the cheese out! In addition to provolone, some of my family’s favorites include Swiss cheese, mozzarella, and mild cheddar.
  • I make a homemade everything bagel seasoning blend with poppy seeds, sesame seeds, and salt if I don’t have a pre-made blend on hand.
  • To deepen the flavor, I mix some Worcestershire sauce into the butter mixture. It adds rich, savory umami notes and enhances the flavor of the beef.

What to Serve with Sliders

I love serving my sliders with simple sides like my air fryer french fries or baked beans! My daughter, Leah, likes pairing them with mac and cheese, and my son, Connor, goes with air fryer onion rings as his side of choice. As with all roast beef sandwiches, these sliders also pair wonderfully with au jus dipping sauce!

Roast Beef Sliders FAQs 

Why are my sliders soggy on the bottom?

My sliders might turn out soggy if the bottom half of the bread is cut too thin. My pro tip to work around this is to cut the bottom section slightly thicker! This will ensure that the buns hold all of the ingredients without getting soggy. Another option is to lightly toast the bottom buns before building the sliders.

How should I store leftovers of this sliders recipe? 

Once fully cooled, I like to store leftovers in an airtight container or directly in the baking dish and refrigerate them for up to 3 days. If storing sliders in the baking dish, cover them tightly with plastic wrap or aluminum foil to keep them fresh.

How do I reheat leftover roast beef sliders?

My favorite way to reheat these sliders in the oven, but I always make sure to let the baking dish sit out at room temperature for a bit before popping it into the oven. I reheat the sliders at 325 degrees F for about 12 to 15 minutes, then after removing the foil, continue baking for 3 to 5 minutes so the tops can get crispy again.

Ingredients

  • 24 count King's Hawaiian rolls 1 package
  • 3/4 – 1 pound deli roast beef thinly sliced, brought to room temperature
  • 8 ounces provolone cheese sliced
  • 3 tablespoons unsalted butter melted
  • ½ teaspoon onion powder

  • 1 tablespoon everything bagel seasoning

  • Bake the sliders uncovered for 12–15 minutes, or until the cheese is melted and the tops are golden brown.
  • Let the sliders cool for 5 minutes, then slice between each roll. Serve warm and enjoy.
