My Easy Philly Cheesesteak Sliders Recipe
My kids onnor and Leah go nuts for small, bite-sized food items, so I’m always on the hunt for new filling ideas for Hawaiian roll sliders. The bread is so soft but crisps nicely in the oven, and the sweetness is such a nice contrast to savory ingredients. So, Philly cheesesteak sliders just make sense!
I love to use Steak-Umms to make the sliders super easy to make while still keeping that amazing flavor. And the provolone just goes so well with the seasonings and steak!
Plus, the recipe can easily be doubled or tripled when I want to make leftovers. And with how simple and quick they are to make, my kids often like to join in and help me layer all of the ingredients!

Cheesesteak Sliders Ingredients
- Thin steak – I like to use Steak-Umms because of how quickly they cook and how easily they can be layered, but shaved steak or any thin cut will work just fine!
- Bell peppers – A combination of both red and green bell peppers will add texture and natural sweetness to the sandwich filling.
- Onion – Adds sweetness and texture while also adding moisture to every bite.
- Garlic powder – Infuses savory notes evenly throughout the meat.
- Smoked paprika – This ingredient is optional, but I never skip it! It adds a rich, smoky depth.
- Salt & pepper – Brings out all the natural flavors.
- Hawaiian rolls – The King’s brand is my favorite! These sweet rolls are easy to slice and work with, and to pull apart once ready to serve.
- Sliced cheese – Melts beautifully on top of the meat to complete each slider. My family usually goes with white American or provolone, but feel free to use any cheese of choice.
- Butter – To brush on top of the sliders and turn them golden and crispy.
How to Make Philly Cheesesteak Sliders
STEP ONE: On medium heat, heat some oil in a pan and cook the sliced onions and bell peppers until they are tender but still a bit crisp.

STEP TWO: Season the meat and cook until fully heated and lightly browned. Drain any excess liquid, then set it aside.

STEP THREE: While the oven preheats to 350 degrees F, prepare a baking dish with foil or parchment paper.
STEP FOUR: Slice the Hawaiian rolls horizontally, separating the top and bottom into two sheets with the rolls still connected for ease of assembly.

STEP FIVE: Place the bottom half of the rolls in the baking dish, then cover with steak and veggies. Next, top with cheese, then cover with the top half of the rolls.

STEP SIX: Brush the top with melted butter, then bake for 10 minutes, or until the cheese is melted and the bread is toasted and golden.
STEP SEVEN: Allow the Philly cheesesteak sliders to rest for 2 to 3 minutes, then serve and enjoy!

Easy Philly Cheesesteak Sliders
Ingredients
For the Steak Filling:
- 2 tablespoons vegetable oil or olive oil
- 1 small onion sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 27 ounces Steak-umms or shaved steak
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika optional, adds depth
For the Sliders:
- 12 King’s Hawaiian rolls sliced in half horizontally
- 6–8 slices Provolone cheese or white American cheese
- 3 tablespoons butter melted
Instructions
- Heat the oil in a large skillet over medium heat. Add the sliced onions and bell peppers, and cook them until they’re tender but still a bit crisp.
- Add the shaved steak and sprinkle in the salt, pepper, garlic powder, and smoked paprika.
- Cook, stirring now and then, until the steak is fully heated and lightly browned. Drain off any excess liquid so the sliders stay crisp, then set the mixture aside.
- Preheat the oven to 350 degrees F (175 degrees C). Line a 9×9 or 9×13-inch baking dish with foil or parchment for easy cleanup.
- Slice the rolls in half horizontally, keeping the tops and bottoms together as a sheet for easier assembly. Place the bottom half on the baking dish. Spread the steak and veggie mixture evenly over it.
- Top the steak mixture with slices of cheese, and then cover with the top half of the rolls. Brush the top with melted butter.
- Bake the sliders in the preheated oven for 10 minutes, or until the cheese is melted and the buns are lightly golden.
- Let the sliders rest for 2–3 minutes, then slice them into individual sliders and enjoy!
Notes
- Â Line the pan with foil or parchment paper to make cleanup easier!
- Drain any excess moisture from the meat after cooking it so the sliders don’t get soggy
- Use a sharp, serrated knife to slice through the Hawaiian rolls cleanly and evenly.
- Use unsalted butter to brush the tops of the rolls. There’s already enough salt in the recipe to not need more.
- Broil the sliders for 1 to 2 minutes to help them crisp up beautifully. Watch them carefully, as they can go from golden to burnt in a quick minute.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat leftovers in the oven at 325 degrees F for 8-10 minutes, in the microwave for 30-45 seconds, or in the air fryer.

Tips for the Best Philly Steak Sliders
- I always line my pan with foil or parchment paper. It makes cleanup so much easier! I’ll let some hang over the side so I can lift the sliders right out when they’re done.
- Be sure to drain any excess moisture from the meat after cooking it. This ensures the sliders don’t turn out soggy.
- Using a sharp, serrated knife is the best way to slice through the Hawaiian rolls cleanly and evenly.
- I prefer using unsalted butter to brush the tops of the rolls, since this Philly cheesesteak sliders recipe already calls for additional salt.
- Broil the sliders for 1 to 2 minutes to help them crisp up beautifully. Be sure to watch them carefully, as they can go from golden to burnt in a quick minute.
Variations and Substitutions
- For a spicy kick, I use Pepper Jack cheese. This is my husband Ben’s favorite! It adds a mild, satisfying heat.
- Swapping bell peppers with mushrooms is a great way to change up the texture and add more savory flavor. In this case, I would recommend using Swiss cheese.
- If Hawaiian rolls are unavailable, brioche slider buns or dinner rolls would make the best alternatives.
- Adding herbs to the melted butter is a simple way to give cheesesteak sliders an extra layer of flavor, while also enhancing their appearance. Parsley is my favorite to mix in!
What to Serve with Sliders
Simple sides like french fries and macaroni salad pair so well with these savory Philly steak sliders! For a lighter meal, I’ll steam some veggies or toss together a green salad and let everyone choose their favorite dressing. My family also loves this recipe with a serving of creamy mac and cheese.

Philly Cheesesteak Sliders FAQs
How should I store leftover philly steak and cheese sliders?
Once cooled, leftover sliders can be wrapped in plastic and placed in an airtight container. They will last in the refrigerator for up to 3 days. For longer storage, I move them to a freezer-safe bag after wrapping them tightly (and individually), then I store them in the freezer for up to 1 month.
How do I reheat leftovers?
My favorite way to reheat these sliders is in the oven at 325 degrees F. They will turn melty and crispy again within 8 to 10 minutes. For a quicker snack, I sometimes reheat one or two in the microwave for 30 to 45 seconds instead. They also heat well in the air fryer.
