Avocado Mayo

My avocado mayo is made without egg, using a simple blend of avocado, sour cream, mustard, lemon juice, and seasoning! I make this easy recipe in just 10 minutes and enjoy it all week long with my favorite sandwiches, wraps, and more.

My Easy Recipe for Avocado Mayonnaise

I always remind my kids, Connor and Leah, that avocados are a source of good fats, making them good for the body in addition to being absolutely delicious. So once I discovered avocado mayo, it was a no-brainer! 

What makes my avocado mayo recipe stand apart from traditional mayonnaise recipes is that it is egg-free. I’m still able to replicate that amazing creamy texture that mayo is known for, and as a bonus, it’s a safe-to-use spread for any guests with egg allergies.

Avocados on their own are already wonderfully creamy, and when paired with sour cream, they reach a whole new level of richness. The flavor isn’t overly strong either, so this spread still works on all our favorites. Whenever I’m serving burgers or sandwiches, Connor reminds me, “Don’t forget the avocado mayo!”

Avocado Mayo Recipe Ingredients

  • Ripe avocados – Use room temperature avocados that are ripe, but not mushy. Avocados are loaded with flavor and serve as the key ingredient that gives this spread its rich, buttery texture.
  • Olive oil – Contributes to the texture of the sauce, creating a smooth and delightful consistency. Avocado oil, or any other neutral cooking oil, could also be used if preferred.
  • Sour cream – This ingredient’s acidity helps prevent the avocado from browning, and its tangy richness is unmatched.
  • Lemon juice – Brightens the recipe while also adding more acidity to prevent browning or spoiling. A little bit goes a long way!
  • Dijon mustard – Helps emulsify the avocado mixture while also enhancing the flavor with savory notes and a hint of spice.
  • Garlic powder – I always incorporate garlic powder to add savory depth to just about anything.
  • Salt & pepper – Classic seasoning to enhance the overall taste and balance out the other flavors.

STEP ONE: Combine the avocados, olive oil, sour cream, lemon juice, Dijon mustard, and seasoning in a blender or food processor.

STEP TWO: Blend until the mixture is smooth and all the ingredients are fully combined.

STEP THREE: Transfer the avocado mayo to an airtight container. Serve over tacos, in steak bowls, with wraps and sandwiches, or as a creamy dip. Enjoy!

Tips for the Best Avocado Mayonnaise Recipe

  • When looking for perfectly ripe avocados, I choose avocados that are beginning to soften but are still a bit firm. One of my other tricks is seeing if the stem can be easily removed. If it comes off easily, that’s often a sign of ripeness.
  • I use full-fat sour cream to get the richest and creamiest results. It has the ideal consistency to help thicken the mixture, and it tastes incredible too. 
  • If the mayo is too thick, gradually add 1 tablespoon of water at a time to thin it out and achieve the desired consistency.
  • Feel free to adjust the seasoning. Once the mixture has been blended, give it a taste and add more salt and pepper as needed to achieve the desired flavor.
  • Cover immediately after blending. Reducing exposure to air right away is critical to preventing browning. Moving the mayonnaise to an airtight container is my best tip for keeping it as fresh as possible!

Homemade Avocado Mayo Variations and Substitutions

  • To add some spice to this recipe, I sometimes stir in diced jalapeños after blending, or I sprinkle in a dash of cayenne pepper or red pepper flakes.
  • For an additional layer of freshness, try adding herbs! Some of my favorites to add include parsley and chives. Cilantro would work too.
  • If lemon juice isn’t available, lime juice or vinegar would work as alternatives. Similar to lemons, these have enough acidity to keep the spread fresh while also adding to the overall taste.
  • Adding a sprinkle of lemon zest brightens the whole batch and helps tie the flavors together.
  • Roasted garlic or minced garlic can be used in place of garlic powder for even more depth and savory richness.

What to Serve with Avocado Mayonnaise

My mayonnaise recipe is incredibly versatile and tastes delicious spread on wraps, hamburgers, turkey avocado sandwiches, and pork chop sandwiches. It also works wonderfully as a creamy dip served with air fryer tortilla chips!

FAQs 

Why is my avocado mayo recipe not thickening up? 

My best tip for achieving the ideal texture with no extra thickeners is using precise measurements. The texture of this recipe will depend on the ratio of ingredients used. It’s also important to blend it long enough for the ingredients to fully emulsify. If the mixture isn’t thickening up properly, try blending it for a little bit longer.

How should I store leftovers?

I immediately store my leftover avocado mayonnaise in an airtight container to maintain freshness. Because it’s homemade, it should be kept in the refrigerator. The lemon juice and sour cream will help delay browning, so the spread should last for up to a week! Be sure to keep an eye on the color, as the spread will no longer be good once brown.

My homemade avocado mayo comes together in almost no time at all. My family loves enjoying it as both a dip and a spread for sandwiches and burgers. Ingredients

  • 2 ripe avocados pitted and removed from the skin
  • 1/4 cup olive oil
  • ½ cup sour cream
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons Dijon mustard
