Pork Steaks in the Oven

My pork steaks in the oven are perfect for busy weeknights when I need a tasty recipe that I can simply set and forget. I marinate the pork first to give it a rich flavor, then cook it low and slow in the oven until tender and falling apart!

My Easy Recipe for a Pork Steak

Making pork steaks in the oven is one of my favorite ways to end a busy week. The secret ingredient in the marinade is Italian dressing, which my kids absolutely love, so I always have a bottle of it on hand.

My recipe was developed to be easy enough to toss the ingredients together, let it marinate during the day, and toss them in the oven once I’m ready to make them for dinner. I cook them low and slow for the most tender result.

Pork meat is incredibly versatile and turns out fabulous in the air fryer, crock pot, and even on the grill, but the benefit of cooking it in the oven is that the process requires little effort and monitoring. Once it’s in the oven, I can walk away while it cooks to perfection!

Pork Steak Recipe Ingredients

  • Pork steaks – My go-to cut of pork for this recipe is pork shoulder butt steaks, also known as pork blade steaks. These have more fat than other pork chops, which helps them stay juicy when baked.
  • Italian dressing – Forms the zesty marinade base for the pork. The acidity of the vinegar helps tenderize the meat.
  • Onion powder & garlic powder – This duo infuses savory, earthy flavor into the dish. 
  • Paprika – Gives the pork smoky warmth while also adding color to the meat. Smoked paprika can be used if a deeper, smokier flavor is preferred.

STEP ONE: Create the marinade by combining Italian dressing, salt, pepper, onion powder, garlic powder, and paprika in a bowl.

STEP TWO: Place the pork steaks in a sealable bag or bowl and pour the marinade over the top. Seal (or cover) and refrigerate the meat for at least 30 minutes, or up to 12 hours.

STEP THREE: While the oven preheats to 300 degrees F, remove the pork from the marinade and allow it to sit at room temperature.

STEP FOUR: Place the marinated meat in a 9×13 dish and cover it with foil. Bake the pork steaks in the oven for 2 to 3 hours, until cooked through and tender.

STEP FIVE: Allow the pork to rest for 5 minutes before serving so that the juices redistribute. Serve warm and enjoy!

Tips for the Best Pork Steaks in the Oven

  • Rest the meat at room temperature before baking it. This ensures even cooking and keeps the pork extra tender.
  • A meat thermometer makes it easy to check the temperature of the meat. The safe minimum temperature for pork is 145 degrees F, but I prefer cooking the steaks to 190 to 195 degrees F for tender, fall-apart results.
  • I like to broil the steaks for 2 to 3 minutes right at the end to give them a beautiful caramelized finish. This step is optional, but it really adds a restaurant-quality touch.
  • Use the drippings to make a sauce. After baking, transfer the juices to a saucepan with a splash of broth and a little butter. Simmer until reduced, then drizzle over the pork when serving!

Pork Shoulder Steak Variations and Substitutions

  • If pork blade steaks are unavailable, boneless or bone-in pork chops from the loin can be used instead. Just keep in mind that the cooking time may need to be adjusted slightly.
  • Other salad dressings can be used as a substitute for Italian dressing. The key is choosing one made with vinegar, since the acidity is what tenderizes the meat.
  • Fresh aromatics like diced onion (or shallot) and minced garlic can be used instead of powdered. 
  • To add some heat to the recipe, I’ll sprinkle some chipotle powder or cayenne pepper into the marinade. We love spicy dishes, especially my husband!

What to Serve with Baked Pork Steak

I love serving pork steaks with classic veggie sides like roasted asparagus, caramelized brussels sprouts, and garlic green beans. My family also loves this recipe paired with simple homemade biscuits, especially when I take the time to make a pan sauce. They help mop up every last drop!

What is the best temperature to bake pork steaks at?

I cook the pork low and slow at a temperature of 300 degrees F. Higher temperatures between 350 and 400 degrees F can be used to shorten the cooking time, but be sure to watch the steaks closely so that they don’t dry out.

Why are my oven baked pork steaks tough?

Overcooking is the most common reason that baked pork turns out tough and dry. For the juiciest results, I recommend using a meat thermometer to monitor the internal temperature of the pork. It’s best to pull it from the oven as soon as the lower end of the temperature range is reached, since it will continue cooking a bit as it rests.

How should I store leftovers? 

I store my leftover pork in an airtight container and refrigerate it for up to 4 days. For longer storage, I wrap each steak tightly in plastic wrap before transferring it to a freezer-safe bag. Stored in the freezer, they will last for up to 3 months.

How do I reheat leftover pork steak?

My favorite way to reheat leftover pork is back in the oven! I simply place the meat in a baking dish with a splash of broth or sauce at the bottom for moisture, then cover the pan with aluminum foil. Reheated at 350 degrees F, it will take 15 to 25 minutes until the meat is warmed through.

Ingredients

  • 4 pork steaks also called pork butt steaks
  • 1 cup Italian dressing
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions
