My cowboy casserole is loaded with tender ground beef, hearty beans and corn, and juicy tomatoes, then topped with crispy tater tots and melted cheese to finish it off. It’s easy to make and is baked to perfection after just 10 minutes of assembly time!

What makes my cowboy casserole recipe so easy

Only 15 minutes of prep – Once the ground beef is browned, I toss everything else into the pan, mix it up, then top it with tater tots. The oven does the rest. Talk about an easy casserole!
Taco seasoning gives a ton of flavor – Instead of using 8 different spices to measure out, I just toss some taco seasoning in with the ground beef and it gives that Tex-Mex flavor I love.
No chopping required – My recipe uses mainly cans, some ground beef, and a bag of frozen tater tots. There’s no chopping tomatoes, onions, etc that can take time and make more of a mess. It keeps that prep time down and makes clean up so much easier!

While I tend to prepare this cowboy casserole recipe for weeknight dinners, it’s a versatile meal that is satisfying at any time of day… not just dinner! My husband, Ben, always enjoys the leftovers for breakfast and lunch the next day.
It’s made with many of the same ingredients as my hamburger potato casserole, but the addition of taco seasoning gives it a unique Tex-Mex twist.
It’s becomes one of my favorite casserole recipes because of how it brings together a variety of different textures.
Packed with tender ground beef, juicy tomatoes, chunky beans and corn, crispy tater tots, and melty cheese, this casserole is filled with hearty ingredients that meld together perfectly in the oven.

Cowboy tater tot casserole ingredients
- Ground beef – For this tater tot casserole with ground beef, I use a lean blend because it is juicy without being too greasy.
- Taco seasoning – I use a pre-made blend for savory, earthy, smoky flavor without having to add individual seasonings.
- Cream of chicken soup – This thick condensed soup gives the casserole a creamy texture and binds the ingredients together.
- Sour cream – Adds a tangy richness to the dish while also balancing out the overall taste.
- Canned corn – Brings in texture and natural sweetness that complements the savory notes.
- Diced fire-roasted tomatoes – Tomatoes add the perfect amount of moisture and acidity, and the fire-roasted variety gives it a smoky flavor. I like to drain the can slightly but keep some of the juices for extra flavor. A can of Rotel will work here as well, but I like the extra smokiness the fire-roasted version gives.
- Canned beans – Pinto or kidney beans are my personal favorites here!
- Shredded cheddar cheese – Melts beautifully while adding rich flavor to each bite.
- Frozen tater tots – These create the golden, crispy topping. No need to thaw them beforehand.
- Milk – This optional ingredient can be used to thin out the consistency of the casserole.

Recipe tips
- Brown the beef completely. This helps develop the best flavor while also drawing out the grease from the meat.
- Use freshly shredded cheese. It tastes and melts so much better than pre-shredded!
- Serve with a variety of toppings! Parsley, chives, and sour cream are some of my family’s favorites to add.
- Broil cowboy tater tot casserole in the last few minutes. This is my trick for getting beautifully crisp and golden tater tots every time.
Variations
- If you don’t have ground beef on hand, substitute it with shredded chicken or another ground protein. Hot Italian sausage is my husband’s favorite swap because he loves the spicy kick!
- Add in some chopped onion. Diced onion works great as another addition and brings a little more savoriness. Just add it in with the ground beef and let them soften. I chose to leave them out of the recipe to keep this recipe more simple in prep.
- To switch up the flavor, swap the cream of chicken with another condensed soup, such as cream of cheddar or cream of mushroom, like I use in my green bean casserole.
- Use a large cast iron skillet for baking. Instead of moving everything to a casserole dish, just top the skillet with the cheese and tater tots and bake it. It works super well and cuts down on another dish to clean. I just use a casserole dish since it’s easier to store leftovers in my fridge.
- For a thinner consistency, milk is my go-to add-in. Chicken broth or beef broth also work well for adjusting the thickness of this cowboy casserole recipe.
- Instead of frozen tater tots, you could use frozen potatoes or frozen hashbrowns if you prefer.

How do I keep the tater tots from getting soggy?
To prevent sogginess, use the tots straight out of the bag without thawing them, and make sure to bake the casserole uncovered.
Can I make this casserole ahead of time?
Yes! Assemble the cowboy casserole up to 24 hours in advance, cover it tightly, and refrigerate. I always add the frozen tater tots right before baking so they stay crispy.
Can I make this in a slow cooker?
You can easily adapt this recipe for the crockpot, though the tater tot topping won’t be as crisp. For the best flavor, I recommend browning the ground beef in a skillet before adding it to the slow cooker.
How should I store leftovers?
This casserole will last for up to 4 days when stored and refrigerated in an airtight container. It can also be frozen for up to 3 months!
How do I reheat leftovers?
For the best texture, I reheat the entire casserole in the oven at 350°F. Cover it with foil and heat for 20 to 30 minutes, removing the foil during the last 10 minutes to help crisp the tater tots.

Cowboy Casserole with Tater Tots
Equipment
- 9×13 baking dish
Ingredients
- 1½ pounds lean ground beef
- 1 tablespoon taco seasoning
- 1 (10.5-ounce) can cream of chicken soup
- ½ cup sour cream
- 2 to 4 tablespoons milk, if needed
- 1 (15-ounce) can whole kernel corn, drained
- 1 (14.5-ounce) can diced fire-roasted tomatoes, slightly drained
- 1 (15-ounce) can pinto beans or kidney beans, drained
- 2 cups sharp cheddar cheese, shredded, divided
- 32 ounces frozen tater tots
Instructions
- Preheat the oven to 375°F. Grease a 9×13 baking dish and then set it aside.
- Heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles with a wooden spoon, until it is no longer pink. Drain any excess grease.
- Sprinkle the taco seasoning over the cooked beef and stir until it is evenly coated.
- Add the cream of chicken soup, sour cream, corn, diced tomatoes, beans, and 1 cup of shredded cheddar cheese. Stir everything together until it's well combined and the cheese begins to melt.
- If the mixture seems too thick, stir in 2 to 4 tablespoons of milk until the filling becomes creamy and easy to stir.
- Pour the filling into the baking dish and spread it into an even layer. Sprinkle 1 cup of shredded cheddar cheese evenly over the top.
- Place the frozen tater tots in a single layer on top of the cheese, covering the entire casserole.
- Bake uncovered for 40 to 45 minutes, or until the filling is bubbling around the edges and the tater tots turn golden brown and crispy.
