Watermelon Feta Salad Recipe

This watermelon salad is the ultimate summer dish! It mixes the sweetness of watermelon, the savory feta, and fresh herbs for a burst of flavors. Super easy to make, perfect for picnics, BBQs, or just a quick, tasty snack.

Ingredients

  • 4 cups watermelon cubed
  • 1 English cucumber diced
  • 1/2 cup feta cheese crumbled
  • 1/3 cup red onion thinly sliced
  • 1/2 cup fresh mint
  • 1/2 cup fresh basil
  • 1 tablespoons olive oil
  • 3 tablespoons lime juice
  • salt to taste

Instructions

  • Prep the fruit and vegetables by cubing the watermelon, dicing the cucumber and slicing the purple onion. Chop the mint and basil. Place them into a large bowl.
  • In a small bowl combine the olive oil and fresh lime juice.
  • Drizzle the watermelon salad with the dressing.
  • Allow the salad to marinate in the refrigerator for at least an hour up to overnight, if it is prepped the day before.
  • When the salad is about to be served, top with feta. If salt is desired, sprinkle to taste, at the very end.
    Wait to add the salt since salt will draw out the water in the watermelon.
  • Serve and enjoy!
