No-Bake Strawberry Crunch

My strawberry crunch is a sweet, crunchy topping that tastes almost like the outside of a Strawberry Shortcake ice cream bar. It takes three ingredients, golden Oreos, melted butter, and strawberry gelatin, and I skip the oven completely. I sprinkle it over ice cream, cheesecake, and yogurt parfaits, or eat it by the spoonful. It stays crunchy with no baking at all.

Ingredients

  • 20 golden oreos
  • 4 tablespoons butter melted
  • 1 (3-ounce) box strawberry gelatin

Instructions

  • Place the golden Oreos in a large ziploc bag and crush them with a rolling pin. You want some crumbs and some small chunks, not a fine powder.
  • Move the Oreos to a medium bowl and slowly add the melted butter, stirring as you go. Do not add the butter all at once or it will soak into some of the pieces and make them soggy.
  • Slowly add the strawberry gelatin, still stirring, so all the Oreo pieces get evenly coated with strawberry flavor and color.
  • Keep stirring until everything is evenly coated. Use it right away or store it for later.

Notes

Add the melted butter a little at a time so no Oreo pieces soak through and go soggy. Slow and steady keeps the crunch.
Store in an airtight container at room temperature for up to 3 days. It also freezes well in an airtight container.
