Easy Coleslaw Recipe (7 Ingredients!)

This easy coleslaw recipe is creamy, crunchy, and comes together in about 5 minutes of hands-on work. A simple homemade dressing of mayo, apple cider vinegar, lemon, and a little sugar coats a bagged slaw mix, then it chills so the flavors meld. It's my go-to for cookouts, potlucks, and backyard barbecues, and it's easy to make ahead.

Ingredients

  • 14 ounce bag of coleslaw mix with red cabbage and carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon granulated sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon celery seeds
  • salt and pepper to taste

Instructions

  • In a small bowl, combine the mayonnaise, sugar, vinegar, lemon juice, and celery seeds.
  • Add in the salt and pepper to your preferred amount.
  • In a large bowl, add the bag of coleslaw mix and pour the dressing over it. Toss the mix to coat it completely. 
  • Refrigerate for at least an hour before serving so the flavors meld.

Notes

Taste the dressing before you toss it with the slaw so you can get the sweet-to-vinegar balance right. Store leftovers in an airtight container in the fridge for 3 to 4 days, though it's crispest in the first day or two. To make it well ahead, keep the dressing and the slaw mix separate and toss them together an hour or two before serving so the cabbage stays crunchy.
