An easy way to make air fryer sweet potato cubes that pairs with virtually any dinner!

1 large sweet potato or two medium ones 1 tablespoon olive oil 1 teaspoon brown sugar optional ½ teaspoon salt ½ teaspoon dried parsley Fresh parsley for garnish optional
Preheat the air fryer to 400F.
Peel and slice the sweet potato into ½ inch cubes, you should have about 2-2 ½ cups sweet potato cubes.
Place them into a large mixing bowl, drizzle with oil and sprinkle seasonings, then toss to combine.
Add the cubed sweet potatoes to an air fryer basket or tray and cook for 8-10 minutes, rotating them halfway through cooking.
Sprinkle parsley and serve warm.
Cook the sweet potatoes in a single layer and not crowded to get evenly cooked and crispy results.
Reheat leftovers at 360 degrees for 3-4 minutes, in a preheated air fryer.
