2small to medium-sized sweet potatoesscrubbed and dried
1teaspoonoilolive oil, avocado oil, or canola oil

Instructions
Preheat the air fryer to 400 degrees F.
Using a fork, poke holes into the skin of the sweet potatoes.
Coat the sweet potato skins evenly with the oil and salt.
Carefully place potatoes into the air fryer and cook for 35-40 minutes until a caramelization can be seen around the fork holes and the sweet potato is tender to the touch with a crispy skin.
Slice in half, let cool until just warm, then enjoy!

Wash and dry the sweet potatoes well so the oil and salt will stick to the skin and get it extra crispy.
Air fry the sweet potatoes until they are tender and soft with a crispy skin. The holes will also show bits of caramelization around them.
Store leftovers in an airtight container in the refrigerator for 3 to 5 days or wrapped in foil and frozen in a freezer bag for up to 6 months.
Reheat leftovers by cooking them halved in a preheated air fryer at 350 degrees F for 5 to 6 minutes until heated all the way through.
