Crispy Air Fryer Zucchini Fries
My air fryer zucchini fries only need 8 simple ingredients and are an easy way to turn zucchini into a lighter summer side dish! The trick is the panko AND parmesan in the breading for an extra crispiness, and then the air fryer does the rest.

- 3 small or medium zucchini
- 2 large eggs beaten
- 1 ½ cups panko breadcrumbs
- ¾ cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- ½ cup all-purpose flour
- ½ teaspoon kosher salt
- black pepper to taste
Preheat the air fryer to 370 F.
Trim the ends of the zucchini then cut them in half. Slice each piece in half lengthwise, then quarter each in as needed to create skinny “fries”. You should get about 24 pieces from each zucchini.
In a wide, shallow bowl, whisk eggs. In a separate bowl, combine breadcrumbs, Parmesan, and Italian seasoning. In a third bowl, whisk together the flour, salt, and pepper.
Working in batches, dredge zucchini in flour, shaking off the excess. Dip into egg, then roll through the breadcrumb mixture, pressing to coat.
Place the zucchini in the air fryer and spritz them lightly with oil. Air fry them for 14-16 minutes, spritzing them with oil and flipping them halfway through the cooking time.
