Chicken Pot Pie with Grands Biscuits (Dump & Bake!)

My chicken pot pie with Grands biscuits comes together in one baking dish. I stir cooked chicken, cream of chicken soup, and frozen veggies right in the dish, top it with cut-up Grands biscuits, and bake until the biscuits are golden and flaky. It's a shortcut comfort dinner that's ready in about an hour, and there's barely any cleanup since it all bakes in the same dish.

Ingredients

  • 8 refrigerated Grands biscuits I used Pillsbury flaky layers
  • 2 cups rotisserie chicken cubed or shredded
  • 1 (10.75-ounce) can cream of chicken soup
  • 10 ounces frozen mixed vegetables thawed and drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • salt and black pepper to taste

Instructions

  • Preheat the oven to 375°F and grease a 8x8-inch baking dish with oil or non-stick cooking spray.
  • Dump the chicken, cream of chicken soup, veggies, garlic powder, onion powder, smoked paprika, salt, and pepper in the baking dish and mix until it's evenly combined.
  • Separate and cut each of the Grands biscuits into 4 pieces and place them on top of the chicken mixture.
  • Bake in a preheated oven for 25-30 minutes, or until the biscuits are fully cooked, golden brown and the chicken mixture is bubbly.
  • Remove the casserole from the oven and let it cool for 5 minutes before serving.

Notes

Store leftovers covered in the fridge for up to 4 days. Reheat leftovers in the oven at 350°F until warmed through or in the air fryer at 330°F to help crisp back up the biscuits better than the microwave.
An 8x8 baking dish gives the best biscuit-to-filling ratio.
If the biscuits start getting too brown before cooking fully, cover the full dish loosely with foil.
