Ingredients

  • 6 hard boiled eggs peeled
  • ¼ cup mayo
  • 4 slices bacon chopped small
  • 1 jalapeno finely diced
  • 1 tablespoons dijon mustard
  • 1 teaspoon vinegar
  • Additional bacon pieces and jalapeno slices to garnish optional

Instructions
 

  • Carefully slice the eggs in half, remove the yolks to a medium bowl, and set the whites aside.
  • Add the bacon, jalapeno, dijon mustard, and vinegar to the egg yolks and mix until fully combined.
  • Spoon or pipe the yolk mixture into the egg white halves.
  • Garnish with a slice of jalapeno and bacon if you would like.
  • Serve immediately or chill until ready to serve.
