Turkey Avocado Sandwich

This turkey avocado sandwich is the perfect quick and easy feel-good meal. Crisp toasted sourdough is layered with a homemade garlic aioli, creamy avocado, sliced turkey, and crisp, salty bacon. This recipe is incredibly versatile so feel free to use what you have on hand– it’s also a great way to use up those Thanksgiving leftovers!

2 teaspoons mayonnaise 1 teaspoon dijon mustard ¼ teaspoon garlic powder 2 slices sourdough or sandwich bread toasted ½ avocado thinly sliced 4 ounces sliced turkey 2 slices crisp cooked bacon 1 roma tomato sliced 1 cup arugula 1 teaspoon olive oil
In a small bowl, stir together the mayonnaise, dijon, and garlic powder.
Spread the shortcut aioli over one side of each piece of toasted bread
Layer the sliced avocado over the aioli and sprinkle it with a pinch of kosher salt and cracked black pepper.
Next layer on the sliced turkey followed by the bacon and tomato.
Lastly, pile on the arugula and drizzle it with olive oil.
Season with another pinch of kosher salt and cracked black pepper.
Place the second piece of bread, dressing side down, on top of the arugula and enjoy.
