Lemon Curd  Cookies Recipe


– Egg yolks – Granulated sugar – Lemon juice – Butter, softened – Powdered sugar – Lemon zest – All purpose flour – Kosher salt

In a saucepan, whisk together the egg yolks, granulated sugar, and lemon juice.

Step 1

Place the saucepan over medium low heat and warm the curd just until you begin to see bubbles.

Step 2

Then reduce the heat to low and cook for 1-2 minutes, whisking constantly. Remove from the heat and whisk in the butter.

Step 3

Place the curd into a bowl and cover it with plastic wrap. Place the curd in the fridge until completely chilled

Step 4

Line two baking sheets with parchment paper. Add the softened butter, powdered sugar, and lemon zest to a stand mixer.

Step 5

Beat on medium speed until well combined. Add the flour and salt. Mix on low speed until a crumbly dough forms.

Step 6

Scoop cookies and roll them into balls. Place them on the parchment paper and flatten into discs. Indent the center of each.

Step 7

Bake for 13 to 15 minutes. Once completely cooled, spoon curd into each cookie. Top with powdered sugar, and serve!
