easy, soft & chewy Chocolate  Marshmallow Cookies

INGREDIENTS

– Salted Butter – Chocolate Chips – All-purpose Flour,  –Cocoa powder, unsweetened – Baking Soda – Salt – Brown Sugar – Granulated Sugar – Eggs – Vanilla Extract – Mini marshmallows

Melt the butter & chocolate chips in a saucepan. Stir constantly to keep it from burning & remove from heat as soon as everything is melted!

~ Whisk the sugar, vanilla extract & eggs into the cooled chocolate mixture.  ~ Add the dry flour mixture to the wet mixture & stir until a dough forms.

~ Then, gently fold in the remaining chocolate chips. ~ Let the dough sit for about 30 mins.

Scoop out the dough with a 2-inch cookie scoop. Roll into a ball & make an indent in the center with your thumb.

~ Place 3 mini marshmallows in the center, then fold the dough over to cover the marshmallows.  ~ Reform into a ball, placing the marshmallow side up.

Bake for about 9-10 mins. Cookies should appear slightly moist (not wet or gooey) and dry around the edges.

Allow chocolate marshmallow cookies to cool for at least 5-6 mins on the baking sheet before transferring them to a wire rack to cool completely!
