Tender Air Fryer Flank Steak

Ingredients

  • 2 pounds flank steak
  • Kosher salt to taste
  • Black pepper to taste
  • 1 cup dry red wine
  • 2 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried rosemary

Sauce:

  • 1 cup beef broth
  • 2 tablespoons butter

Instructions
 

  • Using a knife, score the steak on both sides with shallow cuts across the grain in a criss-cross pattern. Season both sides with salt and black pepper.
  • In a 2-cup measuring cup, whisk together the red wine, olive oil, Worcestershire sauce, garlic, Dijon, and rosemary. Pour the mixture into a plastic zipper bag, then place the steak in the bag and massage the marinade into the meat. Refrigerate it for 4-8 hours, or overnight.  
  • Remove the steak from the bag and place it on a cutting board, then pour the leftover marinade from the bag into a saucepan and set it aside.
  • Pat the steak dry with paper towels. Let it rest and come to room temperature for about 30 minutes.
  • Preheat the air fryer to 400 degrees F. Place the steak inside, and cook for 5-7 minutes on each side, flipping once. (5 mins each side for 130 degrees/med-rare)
  • Remove the steak and allow it to rest on a cutting board for 10 minutes, then slice thinly against the grain.
  • While the steak rests, make the sauce (optional). Add the beef broth to the saucepan with the marinade. Bring it to a boil over medium-high heat, then reduce the heat and simmer it until the sauce thickens. Stir in the butter, taste, and season if necessary.

Notes

  • Slice the steak thinly and against the grain.
  • Take the flank steak out of the air fryer when it reaches 5 degrees below your desired doneness level. The temperature will rise another 5 degrees while it rests wrapped in foil.
  • Doneness temperatures:
    • Medium-rare: 130-135 degrees F
    • Medium: 140-145 degrees F
    • Medium-well: 145-150 degrees F
    • Well Done: 155-160 degrees F
  • Reheat leftovers in a preheated air fryer at 350 degrees for about 2-4 minutes.
  • Store any leftovers in an airtight container in the fridge for up to 3 days.
