Rosemary Mashed Potatoes

These rosemary mashed potatoes are nothing short of potato perfection. The comforting taste of creamy potatoes combined with fragrant rosemary creates an irresistible dish everyone is sure to love.

Ingredients

  • 2 ½ lbs yellow potatoes
  • ¾ cup heavy cream
  • cup butter
  • 4 cloves garlic smashed
  • 2 sprigs rosemary
  • 1 sprig thyme
  • ½ teaspoon salt
  • ½ teaspoon dried rosemary
  • ¼ teaspoon dried thyme leaves
  • ¼ teaspoon garlic powder

Instructions

  • Place potatoes in a large pot and cover with water, add a generous pinch of salt and bring to a boil. Cook for 10-15 minutes, until potatoes are tender.
  • Meanwhile, heat the cream, butter, garlic, rosemary and thyme in a small saucepan until simmering. Allow to simmer five minutes, then turn the heat down to keep warm
  • Drain the potatoes, then strain the warm cream mixture into the potatoes. Add the salt, rosemary, dried thyme and garlic powder and mash the potatoes using a potato masher or beaters until the potatoes are smooth.
  • Serve warm.
