One-Pan Ground Beef Stir Fry (25 Minutes!)
My ground beef stir fry cooks in one skillet in about 25 minutes. I brown the beef, cook whatever veggies I have in the fridge, and toss it all in a sweet and savory sauce of soy sauce, hoisin, and brown sugar. It's an easy way to use up produce, and I serve it over rice.

Stir-Fry
- 2 pounds ground beef I used 80/20
- 1 tablespoon cooking oil
- 1/2 cup red bell pepper sliced
- 1/2 cup red onion sliced
- 1 cup broccoli florets cut into bite-sized pieces
- 1 cup zucchini sliced into half-moons
- 2 cloves garlic minced
- 1 cup mushrooms sliced
- ⅓ cup carrots cut into matchsticks
- white rice for serving
Sauce
- ½ cup soy sauce
- 2 teaspoons brown sugar
- 2 teaspoons hoisin sauce
- 2 teaspoons water
- 2 teaspoons cornstarch
Garnish
- 3 green onions thinly sliced
- Sesame seeds
Whisk the soy sauce, brown sugar, hoisin, water, and cornstarch in a small bowl until the cornstarch is fully dissolved. Set it aside.
Heat a large skillet over medium-high. Add the ground beef and cook 5 to 7 minutes, breaking it up as it goes, until it's browned with no pink left and most of the liquid has cooked off. Drain the grease and move the beef to a plate.
Add the oil to the same skillet. Cook the veggies 4 to 6 minutes until crisp-tender, then stir in the garlic and cook 30 seconds more.
Return the beef to the skillet. Whisk the sauce again, since the cornstarch settles, then pour it over and cook 2 to 3 minutes, stirring, until it thickens and coats everything.
Serve over rice, topped with green onions and sesame seeds.
Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, add a little oil to a pan and toss over medium heat for about 5 minutes, until warmed through.
Swap the 80/20 beef for leaner beef, or for ground pork, chicken, or turkey.
Cook the veggies over medium-high heat. If the pan isn't hot enough, they will steam and go watery instead of crisp-tender.
Want it saucier? Stir in a splash of water or broth at the end to loosen it up.
