No-Bake Cherry Delight with Cool Whip

My cherry delight has a graham cracker crust, a cream cheese and Cool Whip filling, and a can of cherry pie filling on top. It takes 6 ingredients and no oven, then chills for 2 hours to set. I make the crust and filling up to 2 days ahead and add the cherries right before serving.

Equipment

  • 8x8 baking dish
  • Gallon sized Ziploc bag
  • Rolling Pin or something to break graham crackers up
  • Hand mixer
  • Rubber spatula

Ingredients

Crust:

  • 1/2 cup unsalted butter 1 stick, melted
  • 15 graham cracker sheets about 2 cups
  • 3 tablespoons powdered sugar

Filling:

  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 8 ounces Cool Whip thawed

Topping:

  • 1 (21-ounce) can cherry pie filling

Instructions

  • Place graham crackers in a gallon size ziplock bag. Use a rolling pin to crush the crackers up finely.
  • Combine the crushed graham crackers, the melted butter and the 3 tablespoons of powdered sugar in a bowl.
  • Press the mixture firmly into the bottom of an 8x8 pan. The bottom of a measuring cup helps pack it into an even layer.
  • Next make the filling: Using a hand mixer whip the softened cream cheese and powdered sugar for 3 minutes, until nice and fluffy.
  • Use a spatula to gently fold in the thawed Cool Whip until no white streaks are left. Spread the filling evenly over the crust.
  • Spoon the cherry pie filling into the middle of the pan and gently spread it out to the edges with the back of the spoon.
  • Cover and chill for at least 2 hours so it sets and cuts cleanly.

Notes

Store leftovers, covered tightly, in the fridge for up to 4 days.
It can also be frozen by leaving the cherry filling off. Wrap the pan tightly and freeze up to 1 month. Let it thaw overnight then add the cherry topping on before serving. The cherry topping gets watery once it's frozen and thawed.
