- 4 cups approximately 4 medium size potatoes peeled, diced gold potatoes.
- 4 cups water
- 2 teaspoons salt
- ⅓ cup salted butter melted
- ⅓ cup milk you can use half and half or even cream, the final result will be richer and creamier
- ⅓ cup chicken broth I used regular but you could use low sodium
Place the diced potatoes in the inner pot of the Ninja Foodi.
Pour the water over the potatoes and close the lid. Set the pressure cook to high for 5 minutes, making sure the valve is closed.
Once the cook time has passed, let the pressure cooker naturally release on its own for 5 minutes.
Do a quick release to release the rest of the pressure.
Open the lid, remove the potatoes then add the melted butter, milk, and chicken broth, and mix on low with a hand mixer until smooth. Put the potatoes back in the pot and use the stovetop setting to keep warm until they're served.
