- 1 cup dried elbow macaroni
- 1 can 15 ounces cream style corn
- 1 can 15 ounces whole corn kernels (with juices)
- 4 ounces velveeta diced
- 2 cups shredded sharp cheddar cheese divided
- 1 stick ½ cup + 2 tablespoons butter, divided and diced
- 1 cup crushed ritz crackers
Preheat the oven to 350°F. Lightly grease a 9x13” baking dish with butter or nonstick cooking spray.
In a large bowl, combine the uncooked elbow macaroni, cream style corn, whole corn kernels (with juices), diced Velveeta, and 1 cup of shredded cheddar cheese. Transfer the mixture to the prepared baking dish and sprinkle over the stick of diced butter.
Cover with foil and bake for 20 minutes, then stir the macaroni casserole.
In a small bowl, melt the remaining 2 tablespoons of butter and then stir the melted butter and the crushed ritz crackers.
Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole and top with the ritz cracker crumbs.
Bake the macaroni creamed corn for an additional 25 minutes, or until the cheese is melted and bubbly and the top is golden brown. Enjoy.
