Easy Tuna Casserole Recipe (Ritz Topping!)
My tuna casserole layers egg noodles, canned tuna, and a creamy cheddar sauce, then bakes under a buttery Ritz cracker topping. I stir in frozen peas and cream of mushroom soup, so it comes together with simple ingredients in about 10 minutes of assembly. It feeds 8 and reheats well, which makes it a good one to keep in the rotation.

- ¼ cup butter melted, divided
- salt to taste
- 1 16 ounce bag egg noodles
- 2 10.5-ounce cans cream of mushroom soup
- 2 7-ounce cans albacore tuna drained
- ½ cup full-fat sour cream
- ½ teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1 3/4 cups cheddar cheese shredded, divided
- 1 cup frozen peas
- 2 cups whole milk
- 1 cup Ritz crackers coarsely crushed
- fresh parsley chopped, for garnish
Preheat the oven to 375°F and grease a 9x13-inch baking dish with 1 teaspoon of the melted butter.
Boil the noodles 1-2 minutes less than stated on the package. Drain them and add them to the casserole dish.
In a large bowl, combine the undiluted soup, tuna, sour cream, and seasonings. Stir everything to combine.
Add 1 cup of the cheese, frozen peas, and 1 ½ cups milk. Stir it all until it's well combined.
Add the mixture to the baking dish with the noodles, stirring until it's evenly coated in the sauce.
Pour the remaining ½ cup of milk over the noodles.
In a small bowl, make the topping by combining the crushed Ritz crackers with the remaining melted butter.
Sprinkle the remaining ¾ cups of cheese over the noodles and top the casserole with the crushed cracker mixture.
Cover it tightly with aluminum foil and bake for 20 minutes.
Uncover, and continue baking for an additional 10-15 minutes until the top is golden and the cheese has melted.
Remove the casserole from the oven and let the tuna casserole sit for 5-10 minutes before serving.
Cook the egg noodles to al dente, about 1 to 2 minutes less than the package states since they will get softer in the oven.
Store leftovers in an airtight container in the fridge for up to 3 days. I like to reheat it in the microwave.
