Easy Tater Tot Casserole Without Meat

My easy tater tot casserole without meat is filled with eggs, veggies, and cheese to make a savory and filling breakfast. It uses frozen tater tots for ease!

Ingredients

  • 8 eggs
  • 1 cup sour cream
  • 10 ounce cream of mushroom soup
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas and carrots
  • 1 red bell pepper diced
  • 1 onion diced
  • 1 1/2 cups shredded cheddar cheese divided
  • 32 ounces frozen tater tots

Instructions

  • Preheat the oven to 375 degrees F and lightly grease a 13x9 baking dish.
  • In a large bowl, whisk together eggs, sour cream, and cream of mushroom soup until smooth. Then whisk in the salt, garlic powder, smoked paprika, and black pepper.
  • Fold in the bell pepper, onion, peas and carrots, and 1 cup of the cheddar cheese.
  • Pour the mixture into the prepared baking dish and arrange the tater tots in a single layer on top.
  • Bake the casserole uncovered for 50–55 minutes until the eggs are set in the center and the tater tots are golden brown.
  • Sprinkle the remaining ½ cup of cheddar cheese over the top and bake it for 3-5 minutes more, until the cheese is melted.

Notes

  • Room temperature eggs mix more easily with the sour cream for a base that’s smooth and creamy.
  • Check doneness with a knife in the center of the casserole. If it comes out clean without liquid egg,  the casserole is ready!
  • Letting the casserole rest in the baking dish for at least 5 minutes allows it to set. This gives me nice, clean slices.
  • To make it ahead of time, prepare the dish until right before adding the tater tots on top, then store covered in the fridge until ready to bake. When ready, top it with the tater tots and bake for an extra 10 minutes.
  • Store leftovers tightly covered or in an airtight container in the fridge for 3 to 4 days.
  • Reheat leftovers in an oven at 350 degrees F until warmed through or in the microwave in 30-second increments until warmed.
