Easy Scalloped Potatoes (with Canned Potatoes!)

My easy scalloped potatoes start with canned sliced potatoes, which cuts the prep to 10 minutes. I layer them with a cheddar cheese sauce made from butter, flour, milk, and garlic, then bake it until the top is golden. It's a cheesy holiday side dish that feeds 9, and it comes together faster than the from-scratch version.

  • 3 (15 ounce cans) sliced potatoes
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 cup whole milk
  • 1 1/2 cup cheddar cheese shredded

Instructions

  • Preheat the oven to 350°F and grease an 8x8 casserole dish.
  • Drain and rinse the canned potatoes well.
  • Melt the butter in a small saucepan over medium heat. Whisk in the flour, garlic powder, salt, and pepper and cook 1 minute. Slowly whisk in the milk and keep whisking until the sauce comes to a bubble and thickens, about 5 minutes.
  • Off the heat, stir in 1 cup of the cheese until melted and smooth. Save the rest for the top.
  • Layer half the potatoes in the dish and season lightly with a little extra salt and pepper if you like. Spread half the sauce over them, then repeat with the remaining potatoes and sauce. Sprinkle the remaining cheese on top.
  • Bake uncovered 30 to 40 minutes, until the top is golden and the sauce is bubbly.
  • Let it sit a few minutes, then serve.

Notes

Drain and rinse the canned potatoes well before layering. The extra moisture is what makes scalloped potatoes turn out watery.
Store leftovers in an airtight container in the fridge for up to 4 days.
To reheat the whole dish, add a splash of milk, cover, and bake at 350°F for about 30 minutes. Single portions warm up fast in the microwave.
