Easy Ritz Chicken Casserole (Creamy!)

My Ritz chicken casserole starts with shredded rotisserie chicken, two cans of condensed soup, sour cream, and ranch seasoning, all stirred right in the baking dish. The buttery Ritz cracker topping bakes up golden and crunchy over the creamy filling. It takes 15 minutes to put together and feeds 8, so it works for a weeknight or a potluck.

Equipment

  • 9x13 baking dish
  • Resealable bag for crushing the crackers

Ingredients

  • 4 cups shredded rotisserie chicken
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (10.5-ounce) can cream of celery soup
  • 1 cup sour cream
  • ¼ cup milk
  • 2 teaspoons ranch seasoning
  • 1 cup cheddar cheese shredded
  • 2 sleeves Ritz crackers
  • ½ cup unsalted butter melted

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
  • Right in the baking dish, combine the cream of chicken soup, cream of celery soup, sour cream, milk, ranch seasoning, and shredded cheddar cheese. Stir until everything is well combined.
  • Add the shredded rotisserie chicken and mix until the chicken is evenly coated.
  • Crush the Ritz crackers in a resealable bag. Add melted butter and mix until the crackers are evenly coated.
  • Sprinkle the buttery Ritz cracker mixture evenly over the casserole.
  • Bake the casserole uncovered for 25 to 30 minutes, or until the casserole is hot and bubbling and the cracker topping is golden brown.
  • Allow the casserole to rest for 5 minutes before serving. This allows the creamy filling to set slightly and makes it easier to scoop.

Notes

Keep some larger pieces when crushing the crackers and dump them lightly on top without pressing them in to get that crisp topping that doesn't turn soggy.
Make it ahead: Assemble the casserole without the crackers the night before then keep it covered in the fridge until you're ready to bake. Just add the cracker topping right before it goes in the oven.
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat it in the oven at 350°F for about 15 minutes until the casserole is hot and topping is crispy again.
