My easy potato soup recipe is made with 4 ingredients making it ideal for weeknight dinners with my family. I use simple ingredients to get a creamy and hearty potato taste with minimal effort.
3poundsrusset potatoespeeled and chopped into 1 inch pieces
Salt and Pepperto taste
4cupsvegetable broth
1cupheavy creamor whole milk
Optional
2tablespoonsunsalted butter
1teaspoongarlic powder
1teaspoonthyme leaves
Topping options
Bacon bits
Cheddar cheese
Green onionschopped
Instructions
Heat the olive oil in a large Dutch oven or pot set over medium-high heat. Add the onion and saute for 5 minutes, until softened.
Stir in the peeled, chopped potatoes and season with salt and pepper to taste. Add broth to just cover the potatoes and bring them to a boil. Reduce the heat to medium, cover, and simmer for 20 minutes, until the potatoes are fork tender. Remove the pot from the heat and stir in the milk (or cream).
Using an immersion blender, blend the soup until smooth. Taste and adjust seasonings as desired.
Stir in any additional optional ingredients until well combined, and serve with desired toppings.
Notes
This recipe tastes phenomenal with just the 4 required ingredients, but I love to add the additional optional ingredients when I have them on hand!
