My crock pot pork chops with mushroom soup are made with 5 simple ingredients and 10 minutes of prep. Bone-in chops slow cook in cream of mushroom soup and onion soup mix, and the sauce thickens into gravy on its own while they cook. I serve them over mashed potatoes to catch the extra sauce.
Optional: Brush olive oil over both sides of the pork chops and set a large skillet over medium-high heat. Sear them for 2 to 3 minutes per side until they're lightly browned. I never skip this because it gives them better color and makes the sauce taste richer.
In a medium bowl, combine the cream of mushroom soup, onion soup mix, and sliced mushrooms until it's well mixed.
Place the pork chops in the crockpot in an even layer.
Spoon the mushroom mixture evenly over the pork chops.
Cover and cook until the pork chops are tender. Low: 4 to 5 hours. High: 2 to 2½ hours. Pork needs to reach 145°F to be safe to eat.
Let the pork chops rest for 5 minutes, then serve with the mushroom sauce spooned over the top.

Browning the pork chops first is optional. If you do it, give yourself another 10 minutes on top of the prep time.
