  • 1/2 cup buffalo sauce homemade or store-bought
  • 4 flour tortillas
  • 1/4 cup chunky blue cheese
  • 1/4 cup shredded lettuce

Optional

  • 1/4 cup shredded cheddar cheese

Instructions

  • Cut the chicken tenders or other leftover chicken into small 1-inch or smaller pieces and place them in a bowl.
  • Pour the buffalo sauce over the chicken and mix to coat them fully with the sauce.
  • Place the tortillas on a flat surface and put 1/4 of the buffalo chicken, blue cheese, lettuce, and cheddar cheese, if using, into each tortilla.
  • Wrap each tortilla up tightly and secure them with a toothpick, if desired.

Notes

  • The wrap can only be as good as the buffalo sauce, so make some homemade sauce if you can. If you need to use store bought, use one you know you love.
  • Smaller pieces of chicken will pick up more of the buffalo sauce in every bite.
  • Layer the shredded lettuce on the bottom so the lettuce absorbs any extra buffalo sauce and keeps the tortilla from getting soggy.
  • Secure the wrap with a toothpick. This makes them easy to stack and store.
  • Store leftover buffalo chicken wraps tightly in foil or in an airtight container in the fridge for up to 3 days. Cooked chicken will keep in the fridge for 3-4 days, so always factor in when the chicken was first cooked into the storage time.
