Sirloin Tip Crock Pot Roast

With a medley of hearty vegetables, my juicy sirloin tip roast in the crock pot requires minimal prep and cooks all day, leaving you with a tender and flavorful roast at dinnertime!

Ingredients

  • 2-3 pound sirloin tip roast
  • 1 1/2- pound bag of baby potatoes
  • 2 cups baby carrots washed
  • 1 large yellow onion sliced
  • 3 garlic cloves minced
  • 1 packet 1 ounce onion soup mix
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef stock
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and black pepper to taste

Instructions
 

  • Start by removing the twine from the sirloin tip roast and then generously season it with salt and pepper.
  • Place washed baby potatoes at the bottom of the crockpot. Add in the washed baby carrots, sliced onions, and minced garlic.
  • Carefully place the seasoned sirloin roast into the crockpot and then sprinkle the onion soup mix over it. Pour in the Worcestershire sauce and beef stock as well.
  • Cover the crockpot and cook it for a cooking time of about 4-6 hours on the high setting and 8-10 hours on the low setting.
  • Once cooked, remove the tip roast from the crockpot, place it on a cutting board, and either slice the meat against the grain or use two forks to shred it.
  • Serve the delicious meat alongside the cooked potatoes, onions, and tender carrots.

Notes

  • A 2.38 lb roast was used in this recipe.
  • Cook this sirloin  4-6 hours on the high setting and 8-10 hours on low.
  • If you'd like to make a thickened sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water in a small bowl until it's smooth. Stir this mixture into the cooking liquid during the last 30 minutes of cooking.
