5-Ingredient Cheesy Hamburger Potato Casserole

My cheesy hamburger potato casserole layers thin-sliced russet potatoes, ground beef, cream of chicken soup, milk, and cheddar, plus a little salt and pepper. It takes 15 minutes to put together, then the oven does the rest. I pull it out bubbly and golden on top, and it makes 8 big servings for the table.

Ingredients

  • 2 pounds ground beef
  • 5 medium russet potatoes washed and thinly sliced
  • 2 10.5-ounce cans condensed cream of chicken soup
  • 1/2 cup milk
  • 4 cups cheddar cheese shredded and divided
  • salt and pepper to taste

Instructions

  • Preheat the oven to 375°F. Brown the ground beef in a large skillet over medium-high heat, 6 to 8 minutes, breaking it up as it cooks. Drain the grease and season with the salt and pepper.
  • Whisk the cream of chicken soup and milk in a bowl until smooth.
  • Arrange half the potatoes in an even layer in the dish. Pour half the soup over them, then add half the beef and half the cheese. Repeat with the remaining potatoes, soup, beef, and cheese.
  • Cover tightly with foil and bake 60 to 70 minutes, until the potatoes are fork-tender. Uncover and bake 10 to 15 more minutes, until the cheese is melted and bubbly.
  • Let it rest about 10 minutes so it sets up, then serve.

Notes

Make it ahead: assemble up to 1 day early, wrap the dish tightly, and refrigerate until you bake it.
Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat the whole casserole covered at 350°F for 20 to 30 minutes, or single portions in the microwave for 2 to 3 minutes.
