Ingredients

  • One 9” store bought pie crust
  • 1 ½ cups mashed sweet potato one 29 oz. can rinsed drained and mashed
  • 1 can sweetened condensed milk
  • 2 large eggs
  • ¼ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg

Instructions
 

  • Preheat the oven to 375 F, line the pie crust with parchment and fill with pie weights, then bake in the preheated oven for 8 minutes. 
  • Meanwhile, prepare the filling by mixing the sweet potato, sweetened condensed milk, eggs, brown sugar, cinnamon, vanilla, and nutmeg until smooth. ( I like to use an immersion blender to make the potatoes extra smooth and blend up any fibers)
  • Once the pie shell has been partially baked, remove the pie weights and parchment, then pour the prepared pie filling into the shell and return to the oven for 30-35 minutes, or until the center is no longer jiggly.
  • Allow to cool completely before slicing and serving with whipped cream and a sprinkle of cinnamon if desired
