Ingredients

  • 1 ½ pounds boneless skinless chicken breast cut into strips
  • 2 tablespoons fajita seasoning or taco seasoning works too!
  • ½ tablespoon olive oil
  • 1 cup salsa
  • 2 bell peppers sliced
  • 1 small onion sliced
  • 1 lime juiced

Instructions
 

  • Place chicken strips in a mixing bowl. Drizzle over the oil and sprinkle on seasoning, tossing to coat well.
  • Place the seasoned chicken in the bottom of the Instant Pot, then top with the salsa. In a second layer, add the onions and peppers. Pour in the lime juice. Do not stir.
  • Secure and seal the lid. Cook on Manual High for 4 minutes, performing a quick release of pressure at the end of the cook time. Open the lid and stir the contents of the pot together.
  • Serve with your favorite fajita toppings
