Ingredients

  • 1 cup dried elbow macaroni
  • 1 can 15 ounces cream style corn
  • 1 can 15 ounces whole corn kernels (with juices)
  • 4 ounces velveeta diced
  • 2 cups shredded sharp cheddar cheese divided
  • 1 stick ½ cup + 2 tablespoons butter, divided and diced
  • 1 cup crushed ritz crackers

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 9x13” baking dish with butter or nonstick cooking spray. 
  • In a large bowl, combine the uncooked elbow macaroni, cream style corn, whole corn kernels (with juices), diced Velveeta, and 1 cup of shredded cheddar cheese. Transfer the mixture to the prepared baking dish and sprinkle over the stick of diced butter. 
  • Cover with foil and bake for 20 minutes, then stir the macaroni casserole. 
  • In a small bowl, melt the remaining 2 tablespoons of butter and then stir the melted butter and the crushed ritz crackers. 
  • Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole and top with the ritz cracker crumbs. 
  • Bake the macaroni creamed corn for an additional 25 minutes, or until the cheese is melted and bubbly and the top is golden brown. Enjoy.
