Ingredients

  • 8 eggs
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1 red pepper diced
  • 1 small onion diced (about 1/2 cup)
  • 32 ounces frozen tater tots
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375 degrees.
  • In a bowl, whisk the eggs and milk together. Add in the salt, garlic powder, onion powder, and pepper and mix.
  • Add in diced red pepper and diced onion and mix again.
  • Spray a 13x9 pan with oil and pour in the egg mixture. Add the frozen tater tots evenly on top.
  • Cook for 55-65 minutes, pulling the casserole out 5 minutes before it's done to add the shredded cheddar cheese then placing it back in the oven to finish cooking.
  • Remove from the oven, cut into squares, and enjoy!
