Fresh cilantrofor garnish (optional)
Instructions
In a shallow bowl, whisk together flour, pepper, and salt until well combined. In a second bowl, lightly beat eggs. Stir together coconut and bread crumbs in a third bowl.
Working one at a time, dredge each shrimp in flour mixture, shaking off any excess. Dip the floured shrimp in the egg, allowing any excess to drip off. Finally, press the shrimp into the coconut-bread crumb mixture, coating them well. Set the shrimp aside on a plate.
Spray the inner basket of an air fryer with cooking spray, then preheat it to 400 degrees F. Place shrimp in a single layer in the basket, spray lightly with cooking oil, and air fry for 4 minutes. Turn shrimp over and continue cooking until golden and fully cooked, 3-4 minutes. Repeat with remaining coated shrimp.
Garnish with fresh cilantro, if desired, and serve with your favorite dipping sauce.
