Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage casing removed
  • 1 cup yellow onion diced
  • 1 teaspoon minced garlic
  • 4 cups chicken broth
  • 1 15-ounce can diced tomatoes
  • 2 teaspoons Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 9-ounce package refrigerated three cheese tortellini
  • 3 cups baby spinach
  • 1/3 cup heavy cream
  • Fresh basil for garnish
  • Grated Parmesan cheese for garnish

Instructions
 

  • Press Saute on the Instant Pot. Heat the olive oil.
  • When the oil is hot, add the sausage and onion. Stir, breaking up the sausage, and cook until it is browned. Add the garlic and cook for a minute until fragrant. Press Cancel.
  • Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper, stirring to combine.
  • Secure and seal the lid. Cook on Manual High for 1 minute, allowing a 5-minute natural pressure release.  After 5 minutes, release the rest of the steam and carefully remove the lid.
  • Press Saute. Stir in the tortellini, bring the soup to a simmer, and cook for 2 minutes. Stir in the cream and spinach, loosely cover the pot with the lid, and let the soup simmer for 3-4 minutes. 
  • Serve garnished with fresh basil and Parmesan cheese.
